Introduction: Paleo/Vegan Easy Brownies

When I started changing my diet two years ago I experienced heavy cravings from time to time. I could not afford most of the paleo healthy snack recipes as most of the ingredients were too expensive in my country. One day talking to a friend (who happens to love cooking) I told her about my cravings so she did a little research and came up with a basic idea for a healthy paleo/vegan brownies that was also really cheap.

After a few changes we came up with this recipe you can use either to make brownies or Cookies.

Step 1: Ingredients

This recipe has 3 main Ingredients.

  • 500g - Kabocha Squash.
  • 200g - Yucca Flour.
  • 20g - Cocoa.

I always saw the kitchen as an everyday laboratory. So be creative and try different combinations, find the Squash you like the most, try Yucca or Carob Flour, and Cocoa from different places!

Aditionally:

  • 1 Cup Almonds or Nuts.
  • Coconut Flakes.
  • Honey.

Step 2: Preparation

Cut the Squash in half and remove the seeds. It should be as easy as scraping it with a spoon.

Once is clean, cut each part in quarters.

Put the Squash in a Pot with enough water and take it to fire. When the water starts boiling, count about 10 minutes or until the squash is soft.

Step 3: Orange Handed

When the squash is cool enough to handle, add 200g of Yucca flour and mix it with your hands. I prefer to use my hands to get a smooth dough and avoid lumps. (It's also anti stress).

Once the dough is soft and has a uniform colour, incorporate the cacao and repeat the procedure.

Step 4: Add Some Magic to It!

I love nuts! So I add some to the dough along with some coconut flakes.

Step 5: Cooking Time!

Pour the dough into a 14cm by 24cm (holds ~ 1 kilo) tray.

Place it in the oven for 30 to 40 minutes.

You will start noticing that the top of the cake cracks. that's ok :)!.

Note: The dough won't grow. So if you like them thicker just use a smaller tray.

Step 6: Enjoy!

After 40 minutes take the brownies out of the oven. They should be ready!.

It's a bit difficult to get the exact cooking point the first few times as you can't use a toothpick and see if it's dry. As you will experience, the dough gets squishy when hot.

You can add some honey on top of the brownies and a some more coconut flakes to give it an amazing look and taste.
