Introduction: Pancake-Brownies

Me and a friend had that project for school where we decided to bake new stuff (yeah, in Switzerland we can bake stuff as a final-exam project! At least when you make an apprenticeship).

So one day i woke up and was like "I really want some Pancakes!" Then the idea struck me. Why don't we combine the pancakes with our project. So the idea formed. We wanted to make brownies which have a layer of pancakes filled with raspberry cream!

Step 1: The Ingredients

Brownies:

  • 2 2/3 cup(400 g) dark chocolate
  • 1 1/3 cup (200 g) milk chocolate
  • 2/3 cup (150 g) butter
  • 1/4 cup (50 g) sugar
  • 4 eggs
  • 1 1/5 cup (150 g) flour

Pancakes:

  • 2 eggs
  • 2 tbls oil
  • 1 tsp baking powder
  • 1/4 cup (50 g) sugar
  • 1 pack vanilla sugar
  • 1 tsp salt
  • 1 1/2 cup (360 ml) milk
  • 2 cups (250 g) flour

Cream:

  • 1 cup (200 g) cream cheese
  • 1 cup (100 g) raspberries (fresh or frozen)
  • 1/8 cup (30 g) sugar

Step 2: Prepare the Pancakes

  1. For the pancakes first beat eggs until they're fluffy. Then add the milk and the oil and mix it all. In the end just add all the dry ingredients and mix until you have a smooth dough.
  2. Now you have to find the biggest pan you have, because you have to make the biggest pancake possible. Heat up the pan, add little oil and then add dough. Now spread the dough all over the pan so you get a really big pancake. When bubbles start to form on the surface you have to turn around the pancake. When you used up all the dough start with the next step

Step 3: The Cream

That's the easiest (even easier) step. Just mix the raspberries, cream cheese and suger and you're finished.

(This cream is really good to eat with a spoon too! So if you have some leftovers; enjoy!)

Step 4: Make the Pancake-rolls

Now take the pancakes and spread the cream on the surface. Don't add too much, it will just end up getting squeezed out of the rolls and make a big mess. Roll the pancakes and then cut off the edges so you get rid of the overlaying pancake. (And again: eat it! It's amazingly good!)

Wait with cutting the rolls until they're cold. When you don't wait all the cream will get squeezed out and i don't think you want that, or do you? So rather prepare the batter in that time!

Step 5: The Brownies

Melt all the chocolate with the butter in a pan on low temperature. After that let it cool down a little and in this time beat the eggs until they're fluffy.

Add the molten chocolate to the eggs and then the flour and sugar. Mix everything well and now you're finished!

Step 6: Layer the Cake!

First you can finally cut the cooled down pancake-rolls into 1 cm wide small rolls.

Then take a baking form which is quite high (about 7 cm). You can use everything that is oven-safe, like baking trays, cake pan... Don't forget to butter the pan or use a baking paper!

Now to the layers: first a layer of brownie-batter, second a layer of pancake rolls and then to finish it again a layer of brownie-batter.

Bake the cake at 356 °F / 180 °C for 30-35 minutes.

IMPORTANT: Doesn't matter how good the cake looks like after baking it. It's still very, very dough-ish in the middle! If you want to make pieces or bring the cake somewhere you have to let the cake cool down for the whole night before cutting it!
If you don't mind to have an almost "molten" cake which you have to eat with a spoon: go for it, it's delicious!

Step 7: Finished Cake

I just love thee brownies, they're really really chocolate-ish and have a great taste! Especially the pancakes with the fresh raspberries give the brownies a special something.
