- 1 tsp of salt
- 1/3 cup of shortening*
- 4 to 6 tbsp of water**
Topping
- 1/4 cup of sugar
- 1/2 tsp of cinnamon

*can be substituted for 1/4 cup of oil
**if you are using oil instead of shortening only 2-3 tbsp

Step 2: Mix Dry Ingredients

Before you start, preheat oven to 350

Mix only the salt and flour, mix with mixing fork until the salt is evenly spread out in the flour.

Step 3: Add Shortening

Cut in shortening (or oil) with fork until dough forms pea-sized balls.

Step 4: Add Water

Stir in water 1 tbsp at a time, mix until it forms a moist dough, trying to work the dough as little as possible, the more you work the dough the tougher it becomes.

Step 5: Roll Out Dough

1)Sprinkle some flour on the surface you are going to use, and on the rolling pin.(keep both well floured while rolling)

2)Form dough into moist ball, remembering not to work it too much.

3)Place the dough on the surface and roll it flat with a rolling pin, use short quick strokes, starting from the center outwards until the dough is nice and thin, (about 1/8")

4)Now fold the dough from the sides inward, into thirds, and then again in the opposite direction.

5)Repeat step 2.

6)Now that you have a nice flat pastry, cut it into squares about 1" wide.

Step 6: Bake

1)Place squares of dough in a cookie pan.

2)Mix the cinnamon and sugar together in a small dish.

3)Sprinkle topping liberally over squares.

4)Put puffs in oven for about 8-10 mins. depending on how doughy or how flaky you like it.
