Introduction: Pinchos Con Carne Y Camarón

Pinchos con carne y camarón (or steak and shrimp on a stick) are one of my family party favorites. The recipe is one my family has used for years. A mix of seasoned steak and marinated shrimp with some added veggies makes for a perfect dinner or snack at home or at a friends. Since the food is all cooked on a skewer, they also are great time savors as you can pre-prep the skewers when you go to marinate the food. While this specific recipe has 3 main food components; steak, shrimp, and squash, it can be adjusted based on preference with the specific marinade recipe included for each.

Supplies

Skewers

Steak:

2 pounds of London broil steak

1/2 tsp. Pepper

1 tsp. Kosher salt

1 Packet of Goya Sazón

1 tsp. Minced garlic

1/2 tsp. Onion powder

1/2 tsp Adobo powder

1 tbsp. of vegetable oil

1/4 cup of Worcester sauce

Shrimp:

1 pound of cooked and deveined shrimp

2 tbsp. Minced garlic

1/2 Cup of honey

6 tbsp. Soy sauce

1/2 tsp. Red pepper flakes

1/4 tsp. Black pepper

Squash:

1 Yellow squash

1 Zucchini

1/2 tsp. Kosher salt

1/2 tsp. Black pepper

1 Cup of Itallian dressing

Step 1: Step 1: Steak and Marinade

You want to cut your London broil steak into small bite sized cubes. Try to keep each piece roughly the same size as to not under or overcook bigger or smaller pieces. Once cut move to a mixing bowl and start adding the listed ingredients in the following order:

(1.) 1/2 tsp. Black pepper

(2). 1 tsp. Kosher salt

(3). 1 pack of Goya Sazón

(4). 1 tsp. of Minced garlic

(5). 1/2 tsp. of Onion powder

(6). 1/2 tsp. of Adobo

(7). 1 tbsp. of vegetable oil

(8.) 1/4 cup of Worcester sauce

Mix in one at a time and stir the meat around in between to evenly season the beef. After thoroughly mixing the ingredients, add a lid to the bowl or transfer everything into a gallon freezer bag and remove all of the air. Refrigerate for at least an hour however, for best results, leave in the refrigerator over night. The longer you let it sit, the more pronounced the marinade will be.

Step 2: Step 2: Shrimp and Marinade

After thawing your deveined and cooked shrimp, set them aside in a gallon freezer bag. In a separate bowl begin mixing in the following ingredients for the shrimp marinade. There is no specific order the ingredients must be added.

2 tbsp. Minced garlic

1/2 Cup of honey

6 tbsp. Soy sauce

1/2 tsp. Red pepper flakes

1/4 tsp. Black pepper

Once thoroughly mixed together, add the marinade to the gallon freezer bag containing the shrimp. Seal the bag while removing excess air. Marinate for at least 30 minutes.

Step 3: Step 3: Squash and Marinade

Last but not least are the veggies. These are the simplest to make. Cut your squash and zucchini into quarter inch sized pieces then transfer to a gallon freezer bag. Add your 1/2 tsp. of kosher salt, 1/2 tsp. of black pepper, and 1 cup of Itallian dressing and mix together. Marinate for at least 30 minutes.

Step 4: Step 4: Lets Get Grilling!

Once you let your food marinate for your desired amount of time, it's time to assemble the skewers. First however, you need to soak your skewers in water for 30 minutes to prevent them from burning while on the grill. After the skewers are soaked we can now begin assembling our skewers. There is not set way to layer the food. I find it is more visually appealing to go: Steak, veggie, shrimp, veggie, then repeat. But ultimately do whatever you find most visually pleasing. One thing to keep in mind is to leave enough room on the bottom of your skewer to rotate them while on the grill. Too little room will result in the skewer breaking while rotating.

On to the grill. First spray the grill with olive oil and let sit for a minute. After that, fire it up to medium heat. Place the skewers across the grill with the bottom of the skewers sticking out just enough for you to rotate each skewer. Let the skewers sit for 2 minutes then flip. Each side should be cooked for 4-5 minutes each depending on how well done you want your steak.

Step 5: Step 5: Enjoy!

Once the skewers are fully cooked transfer them to a plate and begin to serve! As you can see we also added some rice to this nights dinner but these pinchos go great with all manner of sides.
