Introduction: Pizza Sauce

This basic tomato sauce is excellent over pizza, and delicious with pasta too.

Step 1: Tomato Sauce for Pizza

Make the tomato sauce: Peel, wash and medium dice one large onion. Mince one clove of garlic.

Peel 1 kg of tomatoes: Make a crosswise incision, place in boiling water for 20 seconds (depending on the ripeness of the tomatoes), remove using a spider and place in ice water.

Remove the skins and medium dice the tomatoes.

Heat 50 grams of olive oil (or other vegetable oil) in a saute pan. Add the onion, fry until translucent. Add the garlic, stir and fry for a minute.

Add the tomatoes, a teaspoon of salt and 0.5 teaspoon of ground black pepper, and stir.

Simmer over low heat, for about an hour, stirring from time to time. Add a little bit of water to the sauce while cooking, if necessary.

Mince a few basil leaves, add to the tomato sauce and cool.

The sauce is ready to spread over your pizza dough!
