Introduction: Pork Tenderloin & Sweet Potato Gratin

Every so often we deserve a nice decadent Feast of comfort food in good company. Especially when our spirits need lifting.

This Pork Tenderloin & Gratin can feed 2 or 3 people well for quite awhile!

Ingredients:
Pork Tenderloin
Black Pepper
Fresh or Baked Garlic
Italian Seasoning, minced holy basil, oregano, lemon balm, thyme, Himalayan pink salt
Sweet Baby Ray's BBQ Sauce
Honey Mustard

and i know it sounds crazy but it's crucial: raspberry jam or "shrub", if you have it on hand.

So prep, chop & cook up a storm.

Step 1: Pick Fresh Herbs, Prep & Oil Tenderloin, Dry Rub & Sauce Marbling

Once you have applied your dry rub of spices to the olive oiled tenderloin & bbq sauce/honey mustard/ honey & raspberry sauce or jam/shrub combo... take a spoon & marble the wet sauce & dry spices gently.

Step 2: Did Someone Say Sweet Potato Gratin?

Chop Veggies
Ham & Cheese
Mince Herbs
Gratin Prep for oven

Chop, cube or dice sweet potatoes, squash, zucchini, golden potatoes, ham & cheese depending on your preferences for texture & flavor explosions.

Create layers of aforementioned sweet potatoes, squash & slather them in a bit of grape seed or olive oil, spice & salt to flavor.

Mince & add fresh herbs: oregano, basil, thyme & if you like add extra thinly sliced garlic.

Take Shredded Provolone,
Mozarella, Gouda & a Creamy Havarti and layer onto vegetables.

Add about
1/4 cup of milk
1/2 cup of heavy cream

Step 3: Cook & Enjoy a Great Feast!

Gratin: Cook at 350 degrees for 30-40 minutes or (until Golden) then remove Sweet Potato & Ham Gratin.. let it cool a bit.

btw: (It's really good with nachos)

Remove Pork Tenderloin and cover in aluminum foil, let it cook in its own heat for a bit, about 5 extra minutes from when you pull it from the oven.
