Introduction: Preserved Lemon Slow Cooker Chicken

There are few things in the poultry department of the grocery store that are more economical than whole roasting chickens. In addition to getting a lot of bang for your buck (especially when they are BOGO), they give you the opportunity to experiment with aromatics inside the bird and lots of yummy spices outside.

This Instructable presents an easy way to slow cook an entire chicken using Preserved Lemons and Za'atar seasoning (a thyme-based Palestinian spice blend) that will amaze you with it's falling-off-the-bone-tender juiciness and savory flavor.

Ingredients:

  • 1 Whole roasting chicken
  • 2 Preserved lemons
  • 3 tbsp Za'atar seasoning
  • 8 oz Baby carrots
  • 4 cloves garlic
  • 8 oz Mushrooms, sliced
  • 1 Red onion, chopped

Step 1: Prep Chicken

Place onions, mushrooms, and carrots in a lightly-oiled slow cooker. Clean chicken and stuff with garlic and preserved lemons. Tie up chicken and dust with za'atar seasoning. Be sure to dust under the skin as well. Place the chicken in the slow cooker breasts-down. No additional liquid is needed.

Step 2: Cook

Cook the chicken on high for about 4 hours or on low for 6-7 hours.
