Introduction: Puffed Millet Chocolate Bar

Millet is one of the oldest and most nutritious grains. It's gluten free, rich in fibre and contains a whooping 12g protein per 100g. Puffed millet is mild in flavour, can be eaten straight out of the bag, as it's already cooked and provides a nice texture to desserts, granolas or salads.

This chocolate bar recipe can be made in 5 minutes and only calls for 4 ingredients. The end result is a crunchy, interesting-looking dessert with the added benefit of vitamins, fibre and extra protein.

Step 1:

For a small square container (4x6inch):

  • 1.5 cups puffed millet
  • 80g milk or dark chocolate
  • 2TBS smooth peanut butter
  • 2TBS honey

The recipe is very simple:

  1. melt chocolate, honey and peanut butter in a microwave
  2. add puffed millet and mix well
  3. spread the mixture in a square container lined with cling film
  4. press the mixture tightly into the container to prevent any gaps
  5. leave in the fridge for 1-2 hours
  6. remove from the container, peel the foil and cut into pieces using a serrated knife
