Introduction: Pumpkin Pancake

Hi Everybody,

In this Instructable I'm about to show you healthy recipe thats very easy to make as well tasty to eat. Packed with energy with less carbs and fat. Of course it involves Pumpkin in it. Do you know, though its a vegetable it tastes little sweet when boiled? Interested to know more.. Let's jump into the process of making it

Step 1: Ingredients

1) Chick pea flour - 1 1/2 cup

2) Pumpkin puree - 3/4 cup

3) Spinach - small bunch

4) Spring onion - 1/4 cup

5) Shredded carrot - 1/4 cup

6) Coriander / Cilantro - small bunch

7) Apple cider vinegar/ lime vinegar/ white vinegar - 1 tsp

8) Baking soda - 1/2 tsp

9) Salt - As required

10) Chilli flakes - 1 tsp

11) Water - As required

Step 2: Steam Pumpkin

You can keep it in oven too, but steaming gives a little different taste. I steam boiled pumpkin and spinach in my steam boiler in two decks. Spinach can be half boiled, that works too.

Step 3: Check Up

After 15 mins, steam blows indicating its been cooked, open the lid and check whether pumpkin has turned soft. Once its cool, add it in blender and obtain the puree

Step 4: Mean While Works

While pumpkin is blowing off its steams, shred your carrot ,chop spring onions and coriander leaves. Sift chick pea flour, you can add all purpose flour too.. but i added chick pea flour in recipe as its rich in protein

Step 5: Battering Up

Add pumpkin puree in sifted flour, add your vegetable add water don't add too much initially add step by step. Let it come to a state where its not too thick nor running consistency. Add salt

Step 6: Beautiful Bubbles

Once everything is mixed finally add baking soda and apple cider vinegar, due to chemical reaction bubbles will be formed for few secs. Pumpkin puree makes batter soft but this aids to obtain batter softer and fluffy. Mix well

Step 7: Its Pancake Time

Add oil in non stick tawa / griddle / iron pan once it picks up heat pour your batter. when one side is done flip it carefully. I'm not a pancake expert, so i used two supports in each hand to avoid tearing or bending as batter will be liquid in at center even though its nicely done at one side

Stack them up and enjoy them with sauce or mayonnaise or in my style....coconut chutney

Step 8: Thank You

As i said its very easy and simple yet healthy one to make. Guilt free delicious breakfast or evening snack. You can have it with your own selection of side dish.
