Have you ever wondered what to do with your left over pumpkin seeds after the Halloween tradition of pumpkin carving? Well here is an easy recipe to make a tasty treat instead of throwing them away. This instructable will be split into two sections, preparing the pumpkin seeds and making the brittle. I hope you enjoy!

Step 1: What You Need to Roast the Seeds

This is what you will need to roast the seeds:

1. Pumpkin

2. Spoon

3. Strainer

4. Bowl

5. Baking sheet

6. Knife (Pumpkin Carving if You Have One)

7. Approximately 2 Tablespoons Vegtable Oil

Step 2: Preparing the Seeds

Use the knife to cut a hole and take the top off of the pumpkin. Then take out the 'guts' of the pumpkin like you normally would and place them in a bowl. Then take out the larger chunks of pumpkin until only the seeds are left. After this put them in a strainer and rinse so the pumpkin seeds are clean.

Step 3: Roasting the Seeds

Coat the seeds with vegetable oil. Put the seeds on a baking sheet and cook at 325°F until they start to brown nicely (30 to 45 minutes). They make a great snack if you have more than enough for the recipe.

Step 4: Congratulations!

You have prepared the seeds. Now you are ready to begin the brittle.

Step 5: What You Need to Make the Brittle

1. Non-stick Vegetable Oil Spray

2. 1 Cup Sugar

3. 1/2 Cup Light Corn Syrup

4. 2 Tablespoons Unsalted Butter

5. 1 Teaspoon Kosher Salt

6. 3/4 Teaspoon Baking Soda

7. 1/8 Teaspoon Ground Cinnamon

8. 1/4 Teaspoon Sea Salt

9. Baking Sheet

10. Heatproof Spatula

11. Digital Thermometer that Goes Above 300°F

12. Medium Sauce Pan

13. Parchment Paper

14. 1 Cup Roasted Pumpkin Seeds (what you just made)

Step 6: Prepare Baking Sheet

Cover baking sheet with parchment paper and spray with vegetable oil. Put aside for now.

Step 7: Sugar Mixture

Put the sugar, corn syrup, and 3 tablespoons of water in the saucepan and bring to a boil over medium heat, stirring so the sugar dissolves.

Step 8: Finish the Mixture

Once the mixture reaches 290°F ( this should take approximately 3-4 minutes), add the pumpkin seeds, butter and kosher salt. Keep stirring often until it turns a pale brown and reaches 305°F (this can take anywhere from 5 to 10 minutes), then add the baking soda and cinnamon so that the mixture bubbles frantically.

Step 9: Finish the Brittle

Pour the completed mixture onto the baking sheet, and use the spatula to spread it evenly. Quickly sprinkle with sea salt, and wait until it hardens. Break the brittle into pieces and store it in an airtight container.

Step 10: Enjoy!
