Introduction: Pumpkin Smoothie
Sitting out in the sun with a big slice of pumpkin pie, no matter how tempting, would be a little weird. But this frosty pumpkin smoothie lets you enjoy that fall treat anytime of year! Plus, flax seed, almond milk and using agave for the sweetener keeps it light and low-cal.
Ingredients
8 ounces pumpkin puree
12 ounces coconut water, frozen into ice cubes
1 cup unsweetened almond milk
6 ounces plain Greek yogurt
3 ounces orange juice, frozen into ice cubes
1/2" cube of fresh ginger
2 Tablespoons flax seeds, ground
2 Tablespoons agave
1/2 teaspoon cinnamon
2 pinches nutmeg
Makes 4 servings (10 ounces)
Directions
- Add all ingredients, except ice cubes, to the blender.
- Blend, adding a few ice cubes at a time.
- Top with a dollop of yogurt and a dash of nutmeg.
