Introduction: Pumpkin Spice Chewy Oatmeal Cookies

When you think of the month of October, what is the first thing that comes to mind? If you are like me, you will immediately think of pumpkins, Halloween, and cool weather. So, on a cool, brisk day, why not whip up a batch of pumpkin spice chewy oatmeal cookies with a ice cold glass of milk. Here below is a quick and easy cookie recipe that will fulfill your craving for something pumpkin-flavored during the fall months! I hope you enjoy these cookies as much as my family and I did!

What you will need:

  • Oven
  • Large Mixing Bowl
  • Medium Mixing Bowl
  • Hand Mixer
  • Spatulas
  • Spoon
  • Baking Sheet(s)
  • 1 Cup Butter
  • 2 Eggs
  • 1 Cup Sugar
  • 1/2 Cup Brown Sugar
  • 1 Cup Flour
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon Salt
  • 1 Package Jello Instant Pumpkin Spice Pudding mix (3.4 oz.)
  • 2 Cups Instant Oats

Note: If you want the pumpkin flavor to be a little more bold, you can add 1/4 to 1/2 teaspoon of pumpkin pie spice.

Step 1: Preheat Oven

Preheat oven to 375°.

Step 2: Collect Ingredients and Supplies

Get out all ingredients and supplies needed to bake the cookies.

Step 3: Beat Butter and Sugars

Add butter, sugar, and brown sugar into large mixing bowl and beat for one minute until combined.

Step 4: Add Eggs

Slowly, add eggs to butter and sugar mixture, beat until all ingredients are combined and the mixture is light and fluffy. Put aside.

Step 5: Combine All Ingredients

Combine the dry ingredients to the wet mixture and blend well.

Step 6: Place on Cookie Sheet

Use a spoon to place cookie dough onto the ungreased cookie sheet.

Step 7: Bake Cookies

Place baking sheet(s) in oven and bake for 8-10 minutes.

Step 8: Watch Cookies

Watch cookies to make sure the cookies do not over bake as they will come out puffy.

Step 9: Let Cool

Allow cookies to cool and settle on the baking sheet(s) for two minutes before transferring the cookies to a wire rack.

Step 10: Serve Cookies

Serve cookies with an ice cold glass of milk and enjoy!
