Introduction: Violet Mashed Potatoes

This is a recipe for purple mashed potatoes. This recipe will delight your guests with unique color and flavor. For those who have not had petite purple potatoes, they have a slight nutty flavor when compared to other potatoes usually used for mashed potatoes.

Supplies

10 petite purple potatoes

1/2 tablespoon salt

1/2 tablespoon black pepper

1 tablespoon unsalted butter

3- 4 tablespoons grated extra sharp cheddar

6 cups of boiling water

1 non-stick cooking pan

1 cooking pot

1 stainless steel fork and knife,

1 medium bowl

Step 1: Cook the Potatoes

In a cooking pot, add 6 cups of water and bring to a boil. Once the water is boiling, add 10 petite purple potatoes and continue to boil for 20-25 minutes. Check potatoes with the knife around the 20 minute mark to test if the potatoes still need to cook. Once they are soft enough for mashing, drain the water and add to a medium bowl for mashing. Mash the potatoes with a fork and add the tablespoon of butter.

Step 2: Mash the Potatoes

In a cooking pot, add 6 cups of water and bring to a boil. Once the water is boiling, add 10 petite purple potatoes and continue to boil for 20-25 minutes. Mash the potatoes with a fork and add the tablespoon of butter.

Step 3: Add the Spice

Add the salt and black pepper. Add the milk to soften the potatoes and stir.

Step 4: Grate Sharp Cheddar Cheese (optional)

Grate approximately 3-4 tablespoons of extra sharp cheddar evenly on top. Serve warm. Makes two servings.
