Introduction: Rainbow Bubble Tea Made With Fruit.( Rainbow Tapioca)

Craving bubble tea but don’t like the taste of how much it costs?

Make your own at home, it's much easier and far more customizable than you think. We'll be doing a special twist to this delightful treat, we'll be adding a little style with some rainbow made with real fruit tapioca pearls.

So get ready to sit back relax and have your favourite treat anytime.

Supplies

Here's what you'll need:

For the puree:

1 cup of Fruit per fruit

70 ml water

For the Tapioca pearls;

60g brown sugar/white

130g Tapioca starch

70 ml of our fruit puree

Brown sugar sauce:

35 g Brow sugar/white

50 ml water

Step 1: Step 1: Make Puree

This is the easy part, you want to make sure you pick out the brightest fruit for the puree.

1. Blend around 1 cup of your colourful fruits of choice in a blender with 70ml of water.

Tip - decided now if your colour will be strong enough or if you need a natural colourant like turmeric or moringa powder.

2. Strain your puree over a mesh sieve to get out all the seeds and pulp.

Your puree is done!!!

Step 2: Step 2: Make the Pearls

1. Now pour 60g of brown sugar or white sugar into a pan, with 5g of tapioca starch and your puree mixture.

Tip - remember if your brown sugar is too dark it can cause the colour to turn brown.

2. Whilst stirring let it cook for around 5 minutes on low medium heat. You’re looking for a sticky consistency thicker than water.

3. Now you can cut the heat and stir in 125g of your tapioca starch. Once it’s combined and a bit crumbly throw it onto a copping and start needling you want to work with it until it reaches a dough kind of like play-dough.

Tip - it will most likely be hot so I used a scraping tool to work with it until it cooled, you can you a rolling pin or a spoon etc.

4. Now it’s time to cut your dough into four sections and roll those sections into long snakes.

5. Now cut them into small pieces, you will then roll those pieces into little balls

Tip- make sure your balls are small not too small but small enough to such through your boba straw.

6. Coat your pearls lightly with tapioca flour and let them sit for 20mins they’ll harden up.

Notes - You will be left with a lot of pearls, remember you’ll repeat these steps until you’ve used all of your fruit colour purees. So here is where you decide to freeze the one you aren’t going to use, you can’t do it after it’s cooked. Put them in an airtight container and freeze them for up to 3 months.

Step 3: Step 3: Time to Boil

1. Heat your water on high heat until it’s boiled you, will need a lot of water to stop it from thickening up.

2. Crank it down to medium heat and drop in your pearls, I used separate pots for different colours but if you don’t mind them mixing you can use one.

3. Let them cook for 20 mins make sure you stir them so they don’t stick to each other or the pot.

Notes- I didn’t realise how thick my water would end up, it was kind of like snot. Tapioca is such a starchy starch that you may have to do a water change halfway. Boil a kettle then strain out your boba and refill the pot with the water.

4. Close the lid on your pot and let them rest in their water for 30mins.

Tip- After opening your lid, if you see that some of your pearls have a hard centre that means they were too big and you’ll have to repeat steps 4 - 5 again I'd recommend just let them boils for 15 mins and sit for 25mins so they don’t overlook work.

Step 4: Make Sauce

1. In the same pot with the boba still in it, you want to combine 50ml of water and 35 g of brown sugar.

Notes - I used other syrups like strawberry, for my iced tea as I didn’t think brown sugar syrup would go. So you have the decision to use a different syrup.

2. Cook on low heat for 5 mins then remove from pot and transfer into a bowl.

Step 5: Make You Tea: Rosemary Orange Zest Chia

You will need:

200 ml of water ( more if you need more)

5g of sugar

Chai tea bag

A sprig of rosemary

An orange

1. Boil your kettle and steep a chai latte tea bag.

2. To that same boiling tea, add a sprig of rosemary and some orange zest. ( The amount depend on taste if you're doing a huge jug add more) Add you sugar

3. After 20 mins remove the rosemary and orange zest

4. Chill for at least an hour.

5. I then add a lot of my kiwi boba to the bottom of a glass, personally, I love a lot of boba.

6. Then add your syrup I used the strawberry syrup from the shops, and add some ice.

7. Now pour your tea into your glass.

Step 6: Make You Tea: Milk Tea

You will need:

Black tea e.g earl grey, typhoon.

100ml Boiling water 1

40ml of Milk

5g of sugar

( My cups are big so the measurements may be different for you)

1. Steep your black tea in 100 ml of boiling water for around 10 minutes.

2. Remove the teabag, then add 140ml of milk.

3. Stir in the 5g of sugar, and your tea is done.

4. Add your boba and syrup to the bottom of your glass, add some ice and pour your milk tea onto it.

Step 7: Make Your Tea: Mango Milkshake

You will need:

150 grams of mango fresh or frozen

1 half and 1 quarter cups milk

3 to 4 ice cubes

optional 2 tablespoons sugar or honey

1. Add chopped mangoes to a blender jar.

2. Add milk and ice cubes

3. Blend until smooth ( no lumps and chunks) if too thick add some milk.

4. Serve mango shake straight away

Step 8: Make Your Tea: Chai Icecream

You will need:

Chocolate sauce

Vanilla icecream

200ml of water

Two chia tea bags

1. Steep your chia tea bags in 200ml of water, no milk is needed

2. Place your boba at the bottom of the glass

4. If your boba has no brown sugar sauce add some chocolate syrup

5. Add as much ice cream as you want to, have fun!

6. Then pour your chai tea onto it.
