Introduction: Rice, Veggies, and Tofu!

Make an incredibly simple, quick, and extremely healthy meal! This main benefit of this meal is how cost-effective it can be prepared in addition to being wicked healthy. The ingredients used add up to be less than $5.00 total and the meal itself will feed a minimum of 4 average persons. Likewise, I simply refrigerate in the pot and have meals on the ready for days!

Supplies

  • Jasmine Rice (Less than $0.50)
  • Steamed Veggies of your liking ($1.00 or less per bag)
  • Tofu ($2.50 - $3.00)
  • Olive Oil
  • Butter
  • Salt
  • Pepper
  • Spices of your liking

Step 1: Jasmine Rice

Bring 3 cups of water to a boil then add in 2 cups of jasmine rice (1.5 cups water : 1 cup rice). Cover the pot and then turn down the stove to a simmer. Set a timer for 15 minutes and the rice will be cooked to perfection. Mix in 1.5 tbs of butter and a bit of salt for some extra flavor.

Step 2: Steamed Vegetables

Next steam vegetables that you enjoy. This meal should be catered to your liking, I chose to add peas & carrots with corn. Simply follow the steaming directions on the bag. Steamed vegetables can be purchased for ridiculously cheap.

Step 3: Tofu

Now take the tofu out of the box and dice it up. Add some salt and pepper for some flavor and then simmer on high with a drizzle of olive oil for 5 to 10 minutes. Add any other spices of your liking. Soy sauce makes another excellent add on for additional flavor. I also threw in some mushrooms to the mix as well.

Step 4: Put It Together

Firstly add your vegetables to the rice with 1 tbs of butter for each bag of vegetables, add some additional salt and pepper onto the vegetables if you please. The tofu can then be mixed in as well or if you prefer, serve them separately. Serve with soy sauce. Enjoy your cost-saving healthy meal!
