Introduction: Roasted Pumpkin Seeds

Everyone loves carving pumpkins around Halloween, but why not make it more interesting? Use the seeds from the pumpkins you carve to make the perfect fall snack: roasted pumpkin seeds!

Step 1: Carve Your Pumpkin

You can carve you pumpkin any way you like! Just be sure to separate the seeds from the guts while you work by putting the seeds in a bowl or a strainer by themselves.

Step 2: Clean and Season the Pumpkin Seeds

Wash the seeds in a sink and pull out any remaining chunks of pumpkin from the bowl. Dry them slightly, making sure they're still somewhat damp. Then lay the seeds out on top of some parchment paper on a baking sheet. Make sure they're not piled too high, or they won't cook right. Then, sprinkle salt all over the pumpkin seeds (more is better! A lot of the salt cooks away).

Step 3: Put the Pumpkin Seeds in the Oven

Set the oven to 375 degrees, and after it's done preheating, put them inside. Let them cook for 15-20 minutes, opening the oven and shake the pans every 5-7 minutes to allow them to cook evenly. After the baking time has elapsed, take them out and let them cool.

Step 4: Enjoy Your Snack!

Your pumpkin seeds are now ready! Enjoy!

    As you stated its hard to get the salt to stick, leaving the pumpkin seeds very bland... So when we cleaned the seeds, we always let them soak in strong saltwater for about an hour before drying and roasting them. It makes a big difference.

    I never tried soaking them in saltwater. Thanks for the tip. Now I just need the pumpkin.

    We LOVE roasted pumpkin seeds! I usually mix them with a little olive oil, salt and paprika before we pop them in the oven. :)
