Introduction: Shepherd's Pie

One of my husband's favorites!  Fairly easy, hearty winter meal. 

Shepherd's Pie

14oz ground lamb
1 small onion
2 carrots
8 mushrooms
1 tomato
2 stalks celery
1 can beef stock
2 tbsp butter
1/4 paprika
salt
pepper

Mashed potatoes
Mine are just russet potatoes, a pat or two of butter, a splash (maybe 1/4 cup) of milk, salt and pepper


Preheat oven to 400
Skin and boil potatoes
chop onion
chop mushrooms
chop carrots & celery
chop tomatoes if not fine enough
melt butter in pan over medium heat
sauté onions, carrots, celery until onions are lightly browned
add mushrooms and lamb, sauté until the meat is browned
add tomatoes, sauté
mix in beef stock, bring to a boil
turn heat to low, reduce stock, stir occasionally until the liquid has evaporated
(strain if necessary)
meanwhile, make mashed potatoes
season meat mixture with salt, pepper and paprika
grease oven dish, fill with meat mixture, top with mashed potatoes
using a fork, make ridges across the surface of the potatoes
cook for about 20 min. or until top is crusty
serve and enjoy!
