Introduction: Simple Cinnamon Caramel Apple Cookies

If you love all things caramel like I do, you will LOVE these simple cinnamon caramel apple cookies!
These cookies are very easy to make with few ingredients and guaranteed to satisfy your sweet tooth!

Supplies
1 1/2cups - all purpose flour
3/4tsp - baking soda
1 1/2cups - old fashioned oats
1/2 cup plus 2 tbsp - salted butter, softened
1 cup plus 2 tbsp - packed brown sugar
1 - egg
3/4 tbsp - vanilla
2 - apples, chopped
25 - caramels, unwrapped
2 tbsp - water
1 drop - cinnamon flavoring
1 tbsp - cinnamon sugar
2 tsp - sugar
Step 1:
Begin by preheating your oven to 325 degrees and line a baking sheet with parchment paper.
Next, in a medium bowl, combine your flour and baking soda.
Then, stir in your oats and set aside.
Step 2:
In a large bowl, combine butter and brown sugar.
Beat on medium speed with an electric mixer until smooth.
Step 3:
Add the egg, vanilla, and cinnamon oil.
Beat for 2 minutes or until light and fluffy.
Step 4:
Add in flour mixture and beat on low until well blended.
Then, add in cinnamon and sugar and mix until well combined.
Step 5:
Now, peel and chop your apples.
Add them to the mixture and mix thoroughly.
Step 6:
Take 10-12 caramels and microwave them for 30 second intervals.
Add the melted caramels into the dough and quickly mix until combined.
Step 7:
Drop dough by rounded tablespoons 2 inches apart.
Bake for approximately 14-18 minutes or until golden brown.
Place cookies onto cooling rack and allow to cool completely.
Step 8:
In a 1-quart saucepan add remaining caramels and water and cook on low heat for about 7 minutes, stirring until completely smooth.
Step 9:
Drizzle warm glaze over the tops of the cookies with a spoon.
Let cool for 15 minutes or until set.
Then, you can enjoy the delicious cookies you just made!
