Introduction: Smoked BBQ Mushroom Burger

As eating less meat is becoming more and more popular we need good tasting meals to not let us get tempted to return to our meat. Also, summer is coming and when you are attending a BBQ at your friend(s) you do not want feel zoned out because there is noting to put on the BBQ besides some bland veggies. That is why you need to try this! It tastes great! With this you can still keep enjoying your BBQ even without meat!

Step 1: Ingredients and Tools

There are some specific ingredients and supplies you will need for this

Ingredients:

  • 2 Rard buns( preferably brown)
  • 2 Radishes
  • 2 Small carrots
  • 400 Grams of mushrooms( I choose chestnut, works with almost every type)
  • 1 Large or 2 small onion
  • 2 Cloves of garlic
  • 1/4 ts smoked paprika(optional)
  • 1 ts sugar
  • 1/2 ts salt
  • 1/4 ts pepper
  • Pinch of cinnamon
  • Pinch of clove powder
  • 1/4 ts paprika powder
  • 1 tbs Worcestershire sauce
  • 2 tbs ketchup
  • Oil
  • Mayonnaise

Tools:

  • Smoker(or BBQ)
  • Wood chips
  • Zester
  • Bowls
  • Cutting board
  • Knife

Step 2: Cutting/mashing

  1. Chop the onions and garlic
  2. Use the zester to make thin slices of carrot
  3. Use a fork to mush/ pull apart the mushroom
  4. Cut the radish very thin

Step 3: Mixing and Adding Spices

Now comes the spice mix which will add some subtle flavour to the mushrooms

Mix the following ingredients

1/4 ts smoked paprika(optional)
1 ts sugar
1/2 ts salt
1/4 ts pepper
Pinch of cinnamon
Pinch of clove powder
1/4 ts paprika powder

I first mix the dry spices to make sure they are equally dispersed

Ad the the mushrooms, garlic, onions and spice mix to a large bowl and mix.

now ad:

1 tbs Worcestershire sauce
2 tbs ketchup
1 tbs Oil

Make sure everything is mixed enough.

Step 4: Smoke the Mushrooms

Now you need to smoke the mushrooms. This can be done on a BBQ or in a smoker like I have. You will need about 1 heaping tbs of chips. Smoke it for +/- 15 minutes. I used some aluminium foil to prevent it from falling through the grill.

Step 5: Drain and Cook

Now when your mushroom mixture is smelling lovely, you need to drain the excess moisture and bake the mushroom on the BBQ(using aluminium foil again) or in the pan, with some oil.

Step 6: Toasting the Buns

Meanwhile, while the mushrooms are cooking, you can cut open the buns and drizzle some oil over it. Put them in a grill, or on the BBQ and toast until there are some nice brown grill marks on the bun.

Step 7: Assembly

Now, place the bun on a plate, add the mushrooms, carrots, radish and some mayonnaise(or your sauce of choice). You can now enjoy your great looking and great tasting burger which will impress your friends!
