Introduction: Spicy Breakfast Tacos - Made Easy

This morning I was craving some sort of breakfast sandwich, burrito...something. However, I didn't have time to run to the store and so I had to make due with what was on hand, and quickly, so I could start my day. This is the result. Taking advantage of store bought tater tots and a quick way to scramble eggs, these spicy breakfast tacos are delicious and flexible.

Ingredients:

  • 4 large eggs
  • 4 soft taco tortillas
  • 1/2 bag store bought tater tots (approx. 20 tots)
  • 4 thin slices mild cheddar cheese
  • Salsa Brava (optional, Salsa Brava is a hot sauce with the consistency of ketchup)
  • Spice Rub (optional)
  • Cooking spray
  • Add'l ingredients, as desired (bacon, sausage, etc...)

Step 1: Prep Tots and Eggs

Prepare tater tots according to package instructions. While the tots are in the oven, scramble the eggs using the microwave method below.

Microwave Scrambled Eggs

In a microwave-safe bowl sprayed with cooking spray, beat 4 large eggs. Microwave for 1 minute. Beat with fork. Microwave 1 minute. Beat again with fork. Season as desired, and microwave for 45 more seconds.

Allow the eggs to rest and move on to the next step.

Step 2: Prepare Tacos

Use the cup method from my Spicy Soft Tacos Made Easy Instructable to melt cheese onto tortillas. Repeat until all 4 soft tacos are nice and cheesy.

Step 3: Build

When the tots are done baking (which shouldn't be long after the tortillas are prepped), place 4-5 tots on top of cheesy tortillas and gently mash with a fork (at this point I like to season my tots with a nice spice rub). Top each tortilla with 1/4 of the scrambled eggs and optional hot sauce. Add any additional toppings you desire, like bacon, breakfast sausage, ham, etc...
