Introduction: Spicy Grilled Chicken and Rice

Appliances needed: A microwave safe bowl, a medium sized skillet, a pair of tongs, and a fork.

Ingredients needed: 2 Cups of rotisserie chicken, shredded cheese, extra virgin olive oil, 1 cup of white Minute rice, 3/4 a cup of diced tomatoes, a lime, a bag of spinach, black beans,cilantro, lemon pepper, Cayenne pepper, black pepper, paprika, salt, butter, and 1 cup of water.

Step 1: Cook Minute Rice

Combine the measurements of water and rice into a microwave safe bowl and add in a few dashes of salt, cilantro, and butter to your liking. Cover the bowl and set microwave for 6 minutes. Let the rice stand until all the water is absorbed. Fluff with a fork and squeeze lime juice over the rice.

Step 2: Prepare Spices

Mix together a combination of Lemon Pepper, Cayenne Pepper, Black Pepper, and paprika. My recommendation is to mix these spices to your own personal taste, while using less cayenne pepper than all the other spices.

Step 3: Preparing the Chicken.

Remove 2 cups of chicken with a fork from the rotisserie chicken. Chop the chicken into fine pieces.

Step 4: Seasoning the Chicken.

Mildly coat the chopped chicken with you seasoning mixture until each piece is covered. Then take the second half of the lime and lightly squeeze the juice over the chicken.

Step 5: Heating the Skillet.

Take the skillet and cover the bottom in extra virgin oil and place the skillet on the stove. Turn the stove on medium heat and await its heating.

Step 6: Cooking the Chicken

Place the chicken in the heated pan and for 6 minutes let it sear in the oil while occassionally shifting the pieces with your pair of tongs.

Step 7: Preparing the Spinach.

Wash and dry 2 cups of spinach leaves and places one cup each on each plate.

Step 8: Adding the Rice and Beans.

Evenly distribute the rice between the plates, then add a 1/4 of a cup of black beans to top the rice.

Step 9: Adding the Chicken and Tomatoes.

Take the chicken from the skillet and divide it evenly between the two plates, as well the 3/4 cup of diced tomatoes.

Step 10: Add Cheese and Serve!

Add your favorite shredded cheese and enjoy your meal!
