Strawberries and Cream Biscuits in Butter are a real treat. These are simple sweet biscuits that don’t even require a biscuit cutter. Go ahead and try this fluffy biscuit baked in butter and topped with sweet icing and sliced strawberries.

Supplies

Ingredients:

1/2 cup (1 stick) salted butter

2 1/2 cups all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

2 cups heavy cream

2 teaspoons strawberry extract, divided

1 1/2 cups strawberries, diced

1 cup powdered sugar

3 tablespoons milk

Equipment Needed:

Measuring Cups: 1 cup, 1/2 cup

Measuring Spoons: 1 tablespoon, 1 teaspoon, 1/2 teaspoon

1 small mixing bowl

1 medium mixing bowl

1 wire whisk

1 spatula

1 large spoon

1 medium knife

1 9x9-inch baking dish

2 potholders

Makes: 9 Strawberry & Cream Biscuits

Step 1: Mix Dry Ingredients

1) In a medium bowl, add the flour, sugar and baking powder in this order. Mix together.

2) Preheat oven to 450 degrees Fahrenheit.

3) Spray a 9 x 9-inch baking dish with non-stick cooking spray.


Step 2: Mix Wet Ingredients

1) Pour in the heavy cream and 1 1/2 teaspoons of the strawberry extract.

2) Stir until a sticky dough forms. If batter still looks dry, add a tad bit more of the heavy cream until you have a sticky dough.

Step 3: Prepare Strawberries

1) Wash strawberries, cut off tops and bottom ends.

2) Take sharp knife, slice and dice until you have filled 1 and 1/2 cups.

Step 4: Add Strawberries to Dough

1) Gently stir in diced strawberries.

Step 5: Add Butter to Baking Dish

1) in a microwave safe bowl melt stick of butter in the microwave.

2) Pour melted butter into a prepared baking dish.

Step 6: Pour Biscuit Dough in Baking Dish

1) pour biscuit dough into baking dish (right on top of the melted butter). Some of the butter will run over the top of the dough.

2) Spread out the batter evenly (the best you can).

Tip: I find this is easiest if I spray my hand with nonstick spray and then gently push the batter around.

Step 7: Bake the Biscuits

1) Bake (on the middle oven rack) for about 25-30 minutes, rotating dish once during baking.

2) Oven times do vary, but tops should be golden brown and when you insert a toothpick in the center, it should come out clean with no wet batter.

Step 8: Prepare Icing

1) in a bowl, whisk together powdered sugar with milk and 1/2 teaspoon of strawberry extract.

2) Drizzle on top of the warm biscuits.

Step 9: Garnish the Biscuits

1) Allow the biscuits to cool slightly then slice and serve with icing drizzled and sliced strawberries.

2) Serve ‘AS-IS’ or add sliced strawberries or use as a base for strawberry shortcakes.
