Introduction: Stuffed Pork Chop Over Spaghetti Squash

Thing’s You’ll Need

Pork Chops

Bacon

Red Onion

Garlic

Spaghetti Squash

Asian Pear

Apple Cider Vinegar

Brown Sugar

Parmesan

Olive Oil

Spices (Ground Ginger, Cinnamon, Garlic Powder, Onion Powder, Chili Powder, Sea Salt, Black Pepper, Crushed Red Pepper)

Step 1: Butterflying

Tip #1 Sharpen your knives before every cooking session.

Preheat the grill. Then begin to prepare your produce. Chop up garlic, Asian pear, red onion. Preheat olive oil in a pan and once hot add in garlic, pears, half the amount of the red onion, and a few dashes of apple cider vinegar. Mix it up and cover. Next let’s prepare the pork chops. Season with sea salt, black pepper, and garlic powder on both sides and carefully using a pairing knife butterfly each chop.

Step 2: Pear Chutney Prep

Tip #2 When seasoning anything be sure to taste before you add it in.

Fry up bacon in separate pan until crispy on both sides. Now back to the pear mixture….time to season it up. Add in brown sugar, and all of the spices on the ingredients list. Taste and adjust to your liking. Now add in a few more dashes of olive oil and mix it up. Now remove pear mixture from pan and place into blender, pulse a few times, and set aside in both. Take crispy bacon, chop it up, and add it into the pear chutney.

Step 3: Cooking Squash and Grilling

Tip #3 Chutney is great on most meat dishes!

Now take spaghetti squash and using a knife make punctures all over the squash. Place it in the microwave for 10 minutes to cook. Thinly slice the Parmesan cheese and place a good amount into each of the pork chops. Next take a couple of spoonfuls of the pear chutney finish stuffing the chops. Make sure they are secure, lower grill to medium, and place onto bbq. Cover and let the pork chops cook for about 5-7 minutes on each side (Check regularly to ensure they are not burning).

Step 4: Spaghetti Squash Prep

Tip #4 Make sure to let the meat rest for at least 5 minutes.

Take the leftover oils from the bacon and add it into the pear chutney pan on medium heat. Remove spaghetti squash from microwave, cut in half, and using a fork remove the squash.

Now add spaghetti squash into pan with Parmesan cheese and red onions, mix it up with some crushed red pepper, sea salt, and garlic powder, and keep on low heat.

Step 5: Suggestions and Serving!

Remove pork chop from grill and let it rest for five minutes or so. Plate and Serve!

Suggestions:

  • Serve with an extra side of pear chutney and a rolled up piece of bacon for some extra kick.
  • Very filling and low carb!
  • Spaghetti Squash is a great substitute for pasta in any style cuisine!
