Introduction: Sugar Free Egyptian Rice Pudding With Date and Cinnamon ( Roz Bel Laban)

Rice pudding or as we call it in Egypt ( Roz bel laban) is a famous sweet dish- as famous as kushari- and the dessert that goes with it. The normal version of rice pudding is sweetened with sugar but in this recipe, it's replaced with a natural sweetener that is the date. so let's see how to make our recipe.

Supplies

For our dessert we are going to need these simple ingredients:

  • 500 ml of full-cream milk.
  • 50 grams of Egyptian short-grain rice(you can add more if you want a thicker pudding).
  • 75 grams of dates.
  • Cinnamon sticks.
  • Raisins.

Step 1: Soaking

To soften the ingredients we can soak them in warm milk (70 °C) for 1-2 hours. Cover the dates with milk then add the rice to the milk pot.

Step 2: Blending

After the dates are soaked in milk, blend them then strain the mix to get rid of the skins.

Step 3: Cooking

Follow these easy steps to cook the rice pudding:

  • Add the milk date mix to the pot.
  • Put it on low flame and cover it.
  • Add a piece of cinnamon.
  • Stir the rice every few minutes to make sure that it doesn't stick to the pot.
  • Keep stirring until it's cooked and starts to bubble, It will take 20-30 minutes.
  • Serve and let it chill in the fridge then garnish with raisins and dates.
    Note, you can add up to 100 grams of rice, but that will make the pudding thicker and harder when it's over chilled.
