Introduction: Sugar Free Protein Balls Video Recipe

These little protein balls are an indispensable snack food in our house for adults and kids alike. They are naturally sweetened with goji berries.

Pack them in lunches or take them on a road trip for a healthy snack. They are also great for satisfying your sweet craving in a healthy way or as a post workout protein snack. Have a look at more recipes here on our website www.globalvegetarian.ca

Ingredients:

3 Tbs goji berries

1/2 cup almonds

1/2 cup walnuts

1/4 cup coconut

1/4 cup cocoa

3 Tbs protein powder

Goji berries and some liquid

Pinch of salt (optional)

Step 1: Process Nuts

Process nuts and coconut in food processor until quite fine.

Step 2: Drain Most of the Water From Goji Berries

Drain most of the water from goji berries into a small bowl. (Using some of the liquid helps to pull the ingredients together to form the balls). Add goji berries, cocoa and protein powder to the processed nuts. Process again until everything is blended evenly and the mixture begins to pull together. Tip: Add some of the reserved liquid from the goji berries or a tablespoon of melted coconut oil if mixture is too dry.

Step 3: Form Into Approximately 1 Inch Balls

Remove mixture into bowl. Form into approximately 1 inch balls by applying pressure with both fists.

Step 4: Store in Fridge for Up to 2 Weeks.

Store in fridge for up to 2 weeks. But I bet you they won't last!

Variation: For peanut butter lovers, add 1 heaping tablespoon of all natural peanut butter along with the goji berries, cocoa and protein powder.
