Introduction: Deep Fried Potato Wedges (piri-piri)

If you're gonna eat junk food, might as well eat it the proper way.

This is my personal favorite recipe of super-crispy deep-fried potato wedges with a piri-piri twist to them!

Step 1: Ingredients

  • 3-4 large potatoes
  • 1/2 cup of refined flour
  • 1/4th cup of cornstarch (or custard powder)
  • Butter
  • Oil (to fry)

For seasoning-

  • Salt
  • Oregano
  • Paprika
  • Piri-piri spice
  • Finely chopped coriander

  • 5-6 cloves of garlic finely chopped(or garlic powder)

Step 2: Prep the Wedges

Take the potatoes and wash them thoroughly. I personally prefer them peeled, but if you like the jacket you can keep it.

Then cut the potato into wedges. An average sized potato will give about 8 wedges. again it depends on your personal size preference.

Once you've cut them, soak them in water for a while so that all the excess starch comes off.

Then load your wedges into a container and boil them for about 5-8 minutes (till they're about 75-80% cooked). Make sure to add salt to the water in which you're boiling the wedges! This step of par-boiling the wedges will add to their final taste.

Step 3: Make the Batter

While the wedges are boiling, make the batter by mixing 1/2 cup of refined flour, 1/4th cup of cornstarch ( or use custard powder like I did; it even adds a nice golden color in the end). Add the oregano, paprika powder, piri-piri spice, finely chopped garlic (or garlic powder), finely chopped coriander and salt to taste. Now add one tablespoon of melted butter to this mixture. The butter heightens the taste and is a tip given to me by my grandmother. Mix everything.
Then slowly add water to this mixture till it becomes a runny batter. It's consistency should be a little thinner than pancake batter, but shouldn't be too runny. Mix thoroughly so that there are no remaining lumps.

Step 4: Dip the Wedges in the Batter and Fry!

The second last step is simply to to dip all the wedges in the batter and make sure they're coated well on all sides. Then fry them in oil (at a medium temperature) for about 5-6 minutes each till they turn a deep golden color. Remove and dab the excess oil on a paper napkin.

If you're health conscious, you can bake these in an oven instead of frying them.

Step 5: Garnish and EAT!

Add salt, little more piri-piri spice and some finely chopped coriander to the wedges and Enjoy!

I love eating them with a cheesy dip/ salsa dip.
But honestly, they don't even need any accompaniment. They're delicious on their own.
