Introduction: Super Simple Glutenfree Rolls

About: Inspired by my cat Chili, who is full of fun and energy, I like to share about food and other home crafts with a new twist of 'chili'-fun. (This user was previously called Snowball10)

I have tried being gluten free for shorter periods of time, where I didn't bother going into the intricate world of glutenfree baking products. I also realise how convenient it is to have a simple and quick recipe for rolls if you have gluten-free friends over. And for both of those situations I don't wan't to bother with weird and expensive ingredients. If it is only for shorter periods of time, or when friends come over, the ingredients need to be something I already have in my pantry or can get at the nearest supermarket, and they mustn't be expensive or difficult to use. That's where oat flour comes into the picture. I always make it myself by grinding oatmeal, but you can also buy readymade oatflour. It is just important to make sure the oats/oatflour is certified gluten free, as ordinary oats usually are contaminated with gluten. Also make sure to ask your glutenfree friends if they can have oats, as some who have gluten allergy cross react even with glutenfree oats.

In addition to being made with only one easy-to-find glutenfree flour, these rolls also need no leavening agent, as the oatflour produces air bubbles by itself because it contains saponins. Which means these rolls are really quick and easy to make. And chia seeds and psyllium help bind them together in place of gluten or the different gums often used in glutenfree baking.

Step 1: Ingredients

makes 4 rolls (do not more than double the recipe -- see explanation in next step)

100 g. gluten free oat flour
1 Tbsp. chia seeds or ground flax seeds
1 Tbsp. psyllium
1/4 tsp. salt
1 Tbsp. oil
1 2/3 dl. cold water
coconut milk for brushing, optional

Step 2: Dough

Mix together all ingredients. Keep stirring till dough has thickened enough to hold its shape. You will see that air bubbles have been incorporated.

Step 3: Shape

Quickly spoon out the dough and roll it with moist hands. If you let the dough thicken too much before it is shaped, you will squeeze the air bubbles out of it, and the rolls will become compact. Do not more than double the recipe (8 rolls) unless you are two people to shape the rolls and work quickly.

Optionally brush the rolls with coconut milk for a golden crust.

Step 4: Bake

Immediately bake the rolls at 200 degrees Celsius for about 20 min. or until they sound hollow when tapped on the bottom. Again, if you allow the rolls to wait too long before they are baked, the dough will firm up too much, and the air bubbles will not be able to expand, resulting in denser rolls.

Step 5: Serve!

Serve with sweet or savory spread or just butter. The rolls themselves have a slightly sweet flavor from the oats.

The rolls only keep fresh a couple of days at rooms temperature, so freeze them if needed.
