Introduction: Superfood Protein Waffles
These are a healthy and easy breakfast for any occasion! With 7+ grams of protein and 13% of your daily calcium, these are a great way to start your day!
Ingredients:
1 cup pancake mix of choice ( I used arrowhead mills)
1 egg or egg substitute
3/4 + 2 T coconut milk
1 T vegetable oil
1/4 cup peanut butter
1 T maca powder
1 scoop protein powder
1 T honey
Step 1:
Mix all ingredients except for the peanut butter together. Microwave the peanut butter on high 20-30 seconds until it is melted.
Step 2:
Stir in the peanut butter. If the mixture feels too thick, add coconut milk 1 T at a time.
Step 3:
Poor mix into waffle maker and cook as directed. Enjoy!

It's true that maca can affect hormones if taken in excess, but unless you eat too much of it, that shouldn't be a problem. In general, it is a superfood that provides energy,supports mood, and helps you focus throughout the day.

I never heard of maca powder, so I looked it up. web md warns women with hormone-sensitive cancers, such as breast, ovarian, and uterine, to avoid maca because it can act like estrogen in the body.
However, on the up-side, the waffles look great, and boosting the protein with nut butter and protein powder is a great idea! I like to use a scoop of cottage cheese or ricotta and handful of toasted pecans added to my bob's red mill 7 grain pancake mix for tenderness, crunch and protein, but your way avoids extra dairy. Yum!
