Introduction: Swedish Cinnamon Rolls

This is a delicious Swedish cinnamon roll called bulla. The recipe I am using is from my Swedish Grandmother.

Supplies

500g milk

14 g dry yeast

150g butter, softened

100g caster sugar

1 teaspoon salt

1 tablespoon cardamom seeds or ground cardamom

390 g wheat flour

390 g baking flour


Filling 

150g butter, softened

100g caster sugar

2 tablespoons ground cinnamon


Topping

1 egg 

Pearl sugar (shown above) or raw sugar

Step 1: Heat Milk

Heat the milk to lukewarm.

Step 2: Mix Yeast and Milk

In a large bowl mix yeast and hot milk together.

Step 3: Kneading Some Bulla

 Combine the butter, sugar, salt, cardamom and flour. Knead the dough in a stand mixer for about 10-15 minutes.

Step 4: Proofing

 Cover the bowl and place it in the oven on proof setting for 30 minutes.

Step 5: Fillings Are Nice

 Mix butter, sugar and cinnamon for the filling.

Step 6: Rolling

Place dough on a floured surface and roll into a rectangle.

Step 7: Smear Filling

Not too thick! Once it’s in a rectangle shape smear the filling evenly over the dough.

Step 8: Swirling

 Roll the dough and cut into 1 inch wide.  It should look like a cinnamon swirl.

Step 9: Almost Done

In a large bowl

Step 10: SUGAR

Brush the top with beaten egg mixture and add the sugar (Pearl sugar is preferable).

Step 11: Cooking

Let the bun raise again, covered for another 30 minutes. Place buns on parchment paper and bake at 450 Fahrenheit for 5- 7 minutes.  Middle of the over in best. Make sure you keep a close eye on the oven!  Cool and enjoy!
