Introduction: Tangy Skirt Steak Tacos With a Sriracha Herb Sauce

Tacos:

  • Small Soft Tortillas
  • Romaine Lettuce
  • Tomatoes
  • Red Onion
  • Mexican Blend Cheese

Skirt Steak:

  • Skirt Steak
  • Soy Sauce
  • Olive Oil
  • Garlic
  • Jalapenos
  • Lime Juice
  • Cilantro
  • Brown Sugar
  • Spices (Salt, Black Pepper, Garlic Powder, Onion Powder)

Sriracha Herb Sauce:

  • Light Hellmann’s Mayo
  • Sriracha
  • Olive Oil
  • Scallions
  • Cumin
  • Chili Powder
  • Garlic Powder
  • Sea Salt
  • Black Pepper

Step 1: Marinate!

Tip #1 Leave yourself about 3 hours to marinate skirt steak. (Doesn’t take long to soak all the flavors up!)

Dice garlic, cilantro, and jalapenos and place into gallon size Ziploc bag. Then place in equal parts olive oil and soy sauce. Followed by a squeeze of lime juice, a generous amount of brown sugar, salt, pepper, garlic powder, and onion powder. Finally place steak into bag, close, and shake it up to make sure steak is even covered with marinade. Place in refrigerator and let it sit for at least three hours.

Step 2: Grill the Steak

Tip #2 Get the grill super hot before adding steak

Preheat the grill on high heat, before adding the steak lower flame to medium high and place steak onto grill. Grilled on each side until you get it to a nice medium-rare. If you like it medium well or well done close the grill cover over and allow the steak to grill for longer.

Step 3: Sauce It Up!

Tip #3 Place sauce into a bag and cut corner to make it easy to apply.

First start by chopping up the tomatoes, scallions and shredding the romaine lettuce. Next take a food processor and add in about 6 tablespoons of mayo, a good amount of Sriracha, scallions, red onion and the spices listed above. Blend it together and slowly add in olive oil until it is at the right texture. Should be slightly thinner than mayonnaise.

Step 4: Taco Assembly

Tip #4 Whenever using soft tortillas always pan fry each side to cook them through!

Next toss the soft tortillas on a heated pan and fry until golden on each side. Next add slices of the sweet and spicy skirt steak and top with cheese and place into oven on 350 F until melted. Now add on the red onions, tomatoes, and shredded lettuce. Top it off with the Sriracha herb sauce and a squeeze of lime and serve!

Step 5: Suggestions

Suggestions:

  • Serve with strawberry margaritas to really add some Mexican flare!
  • In this recipe a small amount of steak goes a long way! Great to serve at any summer barbecue.
