Introduction: The Skookie

Imagine if a Samoa Cookie and a Magic Cookie Bar had a baby in a skillet, that’s what The Skookie is. It is a cookie baked in a skillet on a grill and it is super yummy. With a shortbread crust, melted chocolate, and drizzled caramel, this pecan and coconut topped dessert is sure to delight the whole family.
To make and grill this ooey gooey dessert, you need a handful of ingredients that are easy to keep on hand for your next impromptu grill-out or camping adventure.

Supplies

Ingredients:
1 cup (2 sticks) salted butter
2 cups all-purpose flour
1/2 cup powdered sugar
1 cup semi-sweet chocolate morsels
2/3 cup caramel ice cream syrup
1/2 cup pecan pieces

You will also need:
Non-stick baking spray
10 inch grill safe skillet
Aluminum foil
Grill-safe bowls
Spoons
Oven mitt
Spatula

Optional:
Whipped cream or ice cream

Step 1: Getting Ready

Gather you ingredients and supplies. Spray your 10-inch grill safe skillet with non-stick baking spray and preheat your grill to 350 degrees Fahrenheit.

Step 2: Toast the Coconut in the Grill

Make an envelope out of aluminum foil. Add shredded coconut and fold to close. Place on preheated grill on each side for two minutes. Using an oven mitt, remove envelope from the grill and set aside.

Step 3: Prepare the Crust

Allow your butter to melt in a grill-safe bowl inside the grill as it preheats. It should take about 2-3 minutes.
Remove bowl from grill and add flour and powdered sugar. Stir together until a dough forms. Press dough into prepared skillet with clean hands.

Step 4: Baking in the Grill

Place the skillet on the grill for 12-15 minutes. The edges should be slightly browned when it is ready to be removed from the heat.

Step 5: Add Chocolate

Remove skillet from the grill with an oven mitt. Sprinkle with chocolate morsels and wait three minutes for them to melt. Spread chocolate with a spatula over shortbread crust.

Step 6: Add Caramel and Toasted Coconut

Top the cookie with a caramel drizzle and then sprinkle the toasted coconut across the top.

Step 7: Add Pecans

Sprinkle the pecan pieces on top of the coconut and gently press with the back of a spoon to join the layers.

Step 8: Enjoy!

To enjoy this grilled dessert, simply slice and put on a plate. Top with vanilla ice cream or whipped cream for an extra special ending to any campfire or grilled meal.
