Introduction: The Turkey Bacon Boss

If you're tired of the sad sandwich routine for lunch, you'll need to level up your lunch routine with this easy to make, yet delicious sandwich. This recipe will feed two people or one very hungry person. I hope you enjoy!

Step 1: Assemble Your Crew!

You'll need the ingredients in the list below. The more fresh they are the better this will taste!

  • Real Mayonnaise (no miracle whip)
  • Bacon (3 slices)
  • Honey Dijon Mustard
  • Deli Dressing
  • Sourdough bread (4 slices)
  • Swiss Cheese (4 slices)
  • Smoked turkey breast (6 slices)
  • An avocado
  • 1/4 tps Cumin
  • 1/4 C fresh salsa
  • A 12" Cast Iron Skillet with a lid

Step 2: Cook the Bacon

Preheat your cast iron skillet over medium heat for a few minutes to get the pan hot. In this particular instance, mine was hot enough to hit the smoke point for the oil I had previously seasoned it with so I had to let it cool slightly.

I cut the bacon in half in order for it to both fit in the pan better and also be just the perfect size for the bread so I wouldn't have to break it later.

Step 3: The Guac Sauce

While your bacon is cooking, peel the avocado and toss it into a bowl. Add your cumin and fresh salsa and mix it around with a fork until its the consistency you like.

Step 4: Clean the Skillet

I enjoy cast iron. Its like a good tool you take care of and frankly my favorite piece in the kitchen next to my knife. It is by far the most versatile thing I have. I've made quiche, giant cookies, pies, omelettes, pizzas, cake layers, etc etc. You get the picture. Its fantastic and you should add one to your kitchen if you don't already have one. . If you are good to it, it will be good to you. It will last a lifetime and it will help make amazing dishes.

Take a square of paper towels and ball them up. Drop them into the remaining grease from your bacon and mop it up. Tongs are helpful.

Step 5: The Creation Begins...

Take your sourdough and coat one slice with mayonnaise and the other with the deli dressing.

Step 6: The Assembly Continues...

Break your Swiss cheese slices in half and lay them diagonally on the bread so that none of the cheese is hanging over the edge.

Fold the smoked turkey in half and lay it across one side of the sandwich slightly overlapping so it covers the whole slice. If some is hanging over the sides its ok, You'll get a nice Maillard Reaction on the pieces that touch the side of the pan. Top with a dollop of your Guac Sauce and spread around evenly.

Next, lay the bacon halves on the other slice of bread and top with the Dijon mustard.

Step 7: Close It Up!

Carefully close up your sandwich and "butter" the top with mayonnaise. Like butter, mayonnaise is just a fat and will make your bread both delicious and crispy. You can always use butter if you're so inclined, no judgement here, I have used both and they are both absolutely delicious!

Put the sandwiches in your cast iron pan mayonnaise side down. While they cook, "butter" the tops of the bread.

Step 8: The Flip

Once ready, flip your sandwiches. I pulled one out of the pan to make it a little easier. Flip them over and then drop a lid on your pan. Depending on how hot your pan is, this step could be done in as little as 3 minutes. I waited about 5 before pulling them out.

Step 9: Bon Appetit

Once you've pulled the sandwiches out of the pan, cut them in half diagonally and plate them.
