Introduction: Tuna,Egg,Potato,Onion and Cheese Scramble

Ingredients Needed:

1 Large Onion Sliced Thin 2 - 5 oz cans of Solid White Albacore Tuna in water

6 Extra Large Eggs Vegetable Oil to coat bottom of pan

1 Cup of Triple Shredded Cheddar Cheese Pam Spray

1 Stick of Butter or 6 tablespoons of Margarine

2 -3 Cups of Frozen Diced Hash Brown Potatoes OR

Peel and chop into small cubes about 8 medium Idaho Potatoes PREP TIME: 15 MINUTES

1/4 teaspoon of Onion Powder COOK TIME: 30 MINUTES

1/4 teaspoon of Garlic Powder TOTAL TIME : 45 MIN TO 1 HR 1/4 teaspoon of Ground Black Pepper SERVING SIZE: 5 TO 6 PEOPLE

1/4 teaspoon of Mediterranean Sea Salt or Regular Salt

Supplies

2 MEDIUM SIZED PANS

Step 1: STEP 1: PREP AND COOK THE POTATOES

1. If using Fresh Potatoes, first wash, peel, remove any spots and cut potatoes into cubes

2. If using the frozen hash brown potatoes, no additional prep is needed.

3. Heat Frying Pan over medium heat for about 1 minute

4. Just coat the bottom of the pan with the Pam Spray

5. Add 2 large Tablespoons of Margarine or 2 Tablespoons of Butter to the preheated pan

6. Add the diced potatoes to the Heated and Buttered pan

7. Add the Garlic and Onion Powder 1/4 teaspoon each to the potatoes

8. Let potatoes brown and cook until golden brown in color then set aside (about 5-7 minutes uncovered)

Step 2: STEP 2: PREPARE THE ONIONS

1. Peel and slice the large onion

2. Slice onion very thin and separate slices joined together

3. Saute onions in 2 tablespoons of margarine caramelized

4. place in a bowl

Step 3: Step 3: Prepare the Eggs

1. Crack all 6 eggs in the bowl

2. Beat the eggs until bubbles form

Step 4: Step 4: Prepare the Tuna

1. Open and Drain water from the can

2. Pour tuna into a bowl

3. Break up large chunks of tuna with a spoon

4. Add 1/2 teaspoon of Mediterranean Sea salt or regular salt and 1/4 teaspoon of ground black pepper

5. Set aside

Step 5: Step 5: Saute Tuna With the Onion

1. Open and Drain water from the can

2. Pour tuna into a bowl

3. Break up large chunks of tuna with a spoon

4. Add 2 tablespoons of margarine or butter and Saute for about 1 minute

5. Stir constantly mix the tuna and onion together

Step 6: Step 6: Add the Potatoes

1. Add the browned potatoes to the tuna and onion mix

2. cook mixing constantly all 3 ingredients (tuna, onion and potatoes) for about 1 minute over low heat

Step 7: STEP 7: Cook Eggs

1. Add 2 Tablespoons of butter to another frying pan over very low heat

2. Add eggs to the Pan

3. As eggs set in the pan lift and pull the eggs to the center of the pan

4. Continue to pull the eggs to the center of the pan until fully cooked

Step 8: Step 8: Add the Shredded Cheese

1. Add a little over 1 cup of Shredded Cheese to the eggs

2. Over a very low heat let the cheese began to melt

Step 9: Step 9 : Add Cheese and Egg

1. Add the cheese and eggs to the tuna, potato and onions

2. Mix eggs and try not to break up the potatoes

3. Continue to flip the mix together not stir

4. Add pepper to taste

Step 10: Step 10: All Done

1. Add to your plate

2. Enjoy with muffins and bacon
