Introduction: Vanilla and White Chocolate Cookies
These are delicious cookies, buttery, almost but not quite like shortbread, with a lovely hint of vanilla. Oh and the white chocolate caramelizes lusciously.
Makes about 25 cookies
Step 1: Ingredients
- 125 g butter
- 50 g sugar
- 1 tablespoon cream
- 1/2 teaspoon vanilla paste
- 175 g flour
- 1 teaspoon baking powder
- 50 g white chocolate
Preheat oven to 180 degrees Celcious
Step 2:
Chop the chocolate into small pieces. Beat the butter, sugar and cream together thoroughly. Add the vanilla paste and mix again.
Step 3:
Dump the flour and baking powder as well as the chopped chocolate into the bowl with the butter/sugar/cream, and mix until it forms a dough.
Step 4: Roll Into Balls
Prepare the trays with baking paper. Roll the dough into about 25 balls.
Step 5: Squash 'EM!
Space the balls about 3 cm apart on the tray, and then using a fork, squash them down twice, creating a criss-cross pattern on the top of each cookie.
Bake in a 180 degree Celsius oven for 15-20 minutes or until lightly golden.
Step 6: Delicious Cookies Done
Let the cookies cool on a cooling rack, then enjoy!

I didn't know vanilla paste was a thing. Why that and not the more familiar vanilla essence?

Hi blueboy4, vanilla paste is just something we used for this recipe as it was in the pantry :) vanilla essence would be a perfectly acceptable substitution.

Sounds delicious. I've only ever seen the criss-cross pattern on peanut butter cookies.
