Introduction: Vegan Black Bean Burger W/ Justegg

A delicious, flavorful black bean burger with a little extra, just egg. This is not your typical dry, frozen burger without flavoring. Dive into this deliciousness.

Supplies

  • 1-15oz can of black beans
  • 1/3C Panko bread crumbs
  • focaccia or bread of choice
  • Just Egg
  • 1/4 Sweet Onion
  • Optional: tomato
  • Optional: lettuce
  • Optional: vegan cheese
  • Optional: avocado
  • 1-2 medium russet potatoes

Step 1: Drain Black Beans

Drain black beans leaving 1/8 of liquid. Mash 3/4 of beans.

Step 2: Cut 1/4 Onion

Cut 1/4 of sweet onion then place in bowl with black beans.

Step 3: Measure 1/3 Cup of Panko Crumbs

Take the panko crumbs and mix in bowl with black beans and onions.

Step 4: Slice Russet Potatoes

Preheat oven to 375. Peel potatoes, slice, oil and season fries. Once oiled and seasoned place in preheated oven for 15-20 minutes or until golden brown.

Step 5: Form Patties

Mix black beans, onions, and panko crumbs well and form into patties. Place patties in freezer for 10 minutes

Step 6: Remove Patties From Freezer

Remove patties from freezer and place in skillet to cook on medium heat. Cook until golden brown and crisp edges.

Step 7: Toast Bread

Place oven on broil. Butter bread of choice, place cheese on bread if you'd like. Then, place in over until cheese is melted or bread is toasted to your liking.

Step 8: Place JustEgg in Skillet

Place Just Egg in buttered skillet and cook for 3-4 minutes on both sides.

Step 9: Pull Bread From Oven

Pull bread from oven, place burger and just egg on bun with avocado, tomato, lettuce, and other desired toppings and condiments.
