Introduction: Vegan Burger (Mushroom-Chickpea Patty)

Ingredients (makes three burgers):

  • 150g (5oz) King Oyster Mushrooms
  • 250g (9oz) Champignon Mushrooms
  • 250g (9oz) Chickpeas (canned)
  • 2 Onions
  • Fat or shortening to sear all the ingredients
  • 2 tbsp Tomate Paste
  • 1/2 tsp Salt
  • 3 Burger Buns
  • Salad (as topping)
  • Tomatoes (as topping)
  • French Fries
  • Optional if vegan isn't a must: Cheese

Tools:

  • Frypan
  • Oven (for the fries)
  • Meat Grinder (I guess a blender or hand blender might work as well if you don't have a meat grinder)

I'm an omnivore, hence neither a vegetarian nor a vegan. But I like to explore everything. Don't expect the the patties to taste like real meat. This is a really good alternative to real meat and to the super expensive meat alternative from the shelf.

Step 1: Cut and Sear the Patty Ingredients I

Start by cutting the onions and sear them until light brown while you cut the king oyster mushrooms.

Step 2: Cut and Sear the Patty Ingredients II

Sear the king oyster mushrooms and the champignon mushrooms one after another until light brown. Meanwhile open the the chickpea can and let it drip off. After the mushrooms sear the chickpeas just lightly, they are already precooked anyhow.

Prepare the french fries, cook according to instructions on the pack.

Step 3: Mix Patty Ingredients and Grind It

Mix all fried ingredients together (onions, mushrooms, chickpeas) and season it with 2 tablespoons of tomato paste and half a teaspoon salt. After having mixed all together use the meat grinder to grind is to a homogenous paste.

Step 4: Shape the Patties

To shape the patties I used a yoghurt pot and cutted it into half to get a mold. I filled the mold with the patty "meat".

Step 5: Fry the Patties

Fry the patties by using plenty of fat or shortening. The patties are very lean, to get a juicy patty they can stand a bit of extra fat. You know, fat is a major flavor carrier.

Step 6: Construct Your Burger

Build you burger to your taste and enjoy.
