Hello Everybody,

In this instructable you are gonna know about very simple yet tasty recipe and ingredients are easily available. Usually brinji is recipe which has several vegetables in it and main ingredient would be rice, but here for a change its vermicelli. Vermicelli is a type of pasta round in section similar to spaghetti, but not as long as spaghetti. Its a quick recipe

Step 1: Ingredients

1) Vermicelli - 2 Cup

2) French beans - 75 gm

3) Carrot - 2 Nos

4) Potato (small) - 2 Nos

5) Tomato (small) - 2 Nos

6) Baby corn - 4 Nos

7) Yogurt/Curd - 2 tbsp

8) Onion - 1

9) Green chilli - 2 nos

10) Ginger - small piece

11) Garlic - 3 cloves

12) Chilli powder - 1/2 tsp

13) Turmeric powder - 1/4 tsp

14) Salt - As required

15) Brinji masala powder(for masala lovers) - 2 tsp

16) Mint leaves - A few

17) Coriander leaves - A few

For Tempering

1) Bay leaves - 2

2) Cloves - 4-6

3) Sesame oil - 2 tsp

4) Cinnamon stick - 2 inch

Step 2: Brinji Masala Powder

If you are buying this outside, you can skip this step. Else you can check out the below Ingredients

1) Cinnamon stick

2) Cardamon - 2 tsp

3) Cloves - 1 tsp

4) Black Pepper - 2 tsp

5) Cumin seeds - 2 tsp

6) Fennel seeds - 2 tsp

Grind them fine in a blender

Step 3: Chop Chop

Slit the chilli, dice the carrot and potato. Cut onion and tomato vertically, beans and baby corn horizontally

Step 4: Tempering

Heat the oil, add the tempering ingredients and sauce until aroma. Add onion and saute until golden brown, add chilli

Step 5: Add Veggie

Add all your veggie and 2 tbsp of water

Step 6: Simmer

Cover it and let it simmer for 5 mins

Step 7: Add Your Masala

Add chilli powder, Turmeric powder, Brinji masala powder and salt. Combine well

Step 8: Add Follow Ups

Add yoghurt/curd , Mint leaves and coriander leaves

Step 9: Saute Well

Add 200 ml water, Mix it well by stirring continuously for few minutes. Put the lid and let it boil for 7 minutes

Step 10: Vermicelli

Vermicelli are also almost similar to noodles except they are more thin and short. Carefully mix then with rest of the ingredients without much breakage

Step 11: Final Step

Put the lid on, let it boil well until all water evaporates. There you go, easy one pot recipe done. Beauty about this is it can be made as meal also or evening snack also .

    This looks really good! I’m thinking of trying it in a wok (I received a big one as a gift) on the BBQ coals!
