Introduction: Witches Brew Noodle Soup

My family and I definitely fall on the fanatic side of things when it comes to Halloween. We love having an excuse to be creative and play pretend. My daughter especially gets a kick out of it. She and I put together this super quick and easy Witches Brew Noodle Soup.

This soup is a play on Saimin. Saimin is a popular noodle soup in Hawaii. So common that McDonald's sells it. It is our "chicken noodle soup" comfort food. It is typically made with dashi broth, fish cake, green onions and char siu but you can find many different versions.

My daughter selected our ingredients and themed them perfectly for Halloween. All things that you would find in Saimin. A little imagination and we had the perfect Halloween meal. Witches Brew Noodle Soup was a hit with the kiddos.

Step 1: Ingredients

To make this a little more spooky I opted for black rice noodles. Traditionally Saimin is made with wheat/egg noodle. I found these black noodles here on Amazon. All of the other ingredients can be found at your local Asian market. My daughter named all the ingredients for the perfect witch concoction. You can have your kids do the same :) it's fun to see what they come up with!

Ingredients:

  • Dashi soup stock (childrens tears)
  • Black noodles ( worms)
  • Char siu/BBQ pork (wolf ears)
  • Fish cake/kamaboko (vampire teeth)
  • Shiitake mushrooms (slugs)
  • Enoki mushrooms (raven bones)
  • Baby Bok choy (swamp algae)
  • Wonton/gyoza/potstickers (cat brains)
  • Dried seaweed (spiderlegs)

Step 2: Ingredient Prep

First start cooking your broth. Mine was an instant powder base that you add to water which is a quick easy 15 minute dinner. They have paste bases or you can make your own with dried kelp and bonito flakes.

Then you cook the gyoza. Place in a pan with 1 tablespoon of oil and cook until golden brown, flip until all sides are brown. Add 2 tablespoon of water to the pan and cover until cooked through.

The shiitake mushrooms I sliced and then sautéed for a couple minutes.

Cook your noodles according to the bag. The most important part is to put them directly into ice water to stop the cooking process. Drain the water and set them on the side until serving.

Cut the fish cake into little triangles to resemble teeth.

Wash and cut your bak choy and enoki mushrooms.

Step 3: Build Your Own Witches Brew

I made a little bar so everyone could build their own spooky soup.

My daughters Spooktacular Witches Brew Recipe is as follows-


  • A handful of worms
  • 10 Vampire teeth
  • Half a cat brain
  • Swamp algae
  • 1 Wolf ear
  • 7 Raven bones
  • 3 Slugs
  • Dash of spiders


Cover in piping hot children's tears and serve to anyone that dares to eat it ;)
