Introduction: Yummy Lemon Poppy Seed Muffins


Preheat oven to 400*
2-1/2 C. Master Muffin Mix (
Add to dry mix:  1-1/2 tsp. poppy seeds
                             1/2 tsp. grated lemon peel

Wet Ingredients:  1/4 c. caola oil
                                1 C. lemon yogurt
                                1 tsp. lemon flavoring
                                1 lg. egg
                                1/4 C. milk
Mix liquids together and add to dry ingredients
stirring just until all dry ingredients re moistened.
Fill muffin cups 2/4 full

Bake at 400* for about 15 minutes, or until golden brown.  You will notice the most heavenly lemon scent wafting from the oven.........oh man oh man oh man!
Let the muffins cool for at least 10 minutes before removing them from the muffin tin. 

2 tbsp. butter- softened
2 tbsp powdered sugar
1-1/2 tsp. poppy seeds
