This is another quick and easy breakfast recipe that is healthy. I sometimes swap out the dried fruit for berries or a finely chopped apple.

Step 1: Gather Your Materials

  • 1 cup quick oats
  • 1 cup milk (rice/almond milk work well here also)
  • 1 cup flour
  • 2 tsp baking powder
  • 1/4 cup sugar
  • 1/4 cup oil
  • 1 egg
  • 2 tbsp sunflower seeds
  • 2 tbsp raisins
  • 2 tbsp dried cranberries
  • 1 tbsp cinnamon

Step 2: Soak the Oats

  • Turn on your oven to 425 degrees Fahrenheit.
  • Mix the oats and milk and allow to soak for 15 minutes.

Step 3: Add the Egg, Oil, and Sugar

  • Add the egg
  • Add the oil.
  • Add the sugar.
  • Mix just to combine

Step 4: Add the Flour and Baking Soda

  • Add the flour.
  • Add the baking soda.
  • Mix to combine.

Step 5: Add Your Dried Fruit, Seeds, and Spices

  • Add your raisins.
  • Add your cranberries
  • Add the sunflower seeds and cinnamon.
  • Mix to combine.

Step 6: Time to Bake

  • Add the batter to a pan that has been sprayed with cooking spray.
  • Bake at 425 for 25 minutes.

Step 7: Cool and Enjoy!

  • Remove from the oven.
  • Separate from the edges of the pan (pictured above).
  • Cool about 5 minutes.
  • Serve with butter, fresh fruits, coffee and tea.
