Introduction: Zatar & Queso Naan Pockets
Easy and delicious savory pockets. Filled with zatar spice & herb blend and queso fresco. Great as a snack or a meal when paired with a salad or veggies.

-2 1/2cup bowls (for additional olive oil and Zatar Seasoning)
-Pastry Brush
-Pie Dish
-Rolling Pin
-Sharp Knife
-Pizza Stone or Baking Sheet Pan
Ingredients
-1/2 cup of warm water
-2 tsp instant yeast
-1 tsp sugar
-3 tbsp of olive oil + plus 1/2 cup of olive oil
-1/4 cup plain yogurt
-1 egg
-1/2 tsp salt
-2 cups of all-purpose flour + 1/2 cups (for dusting on kneading and rolling surface)
-Package of Queso Fresco Cheese
-2-3 Tbsp Zatar Seasoning
Step 1: Prep Yeast
Combine warm water, yeast, and sugar in a mixing bowl.
Let sit for five minutes or until bubbles form.
Step 2: Make Dough
Add 3 Tbsp olive oil, yogurt, egg, and 2 cups of flour to bowl with yeast water. Stir with spatula to mix all ingredients.
Step 3: Knead Dough and Let Rise
Apply four to counter then knead dough until smooth.
Form into a ball and place in an oiled bowl.
Cover bowl and let sit about an hour. Dough should double in size.
Step 4: Prep Filling and Preheat Oven
While dough is rising, cut the Queso round into quarters. Then turn one quarter on its side and cut into 6-8 even slices. Place the slices of queso into the pie pan and coat both sides with Zatar Seasoning.
Place pizza stone or baking sheet in oven and pre-heat to 500 degrees Fahrenheit.
Step 5: Portion Dough
When dough is ready place on a floured surface and form into a circle.
Cut into 6-8 even sections.
Step 6: Form and Stuff Pockets
Using a rolling pin, roll a section into a 3 to 4 inch triangle. Place the zatar covered queso in the center of the triangle and then sprinkled a little more Zatar on top. Fold the corners in and pinch the edges together.
Step 7: Bake
Brush each pocket with olive oil. Roll the excess corners over (if any). Place in the oven directly on the hot pizza stone or baker sheet. Bake for 5 min at 500 degrees. **Set a timer for 4 minutes and keep an eye on the pockets for the last minute so you don't over bake.
Step 8: Coat With Oil and Zatar
Once the pockets are golden with darker edges pull from oven and coat again with olive oil and sprinkle with more Zatar for garnish.
Step 9: Eat and Enjoy!
