Introduction: Zucchini Soup

Zucchini soup is a culinary refinement that we can easily afford.

It can be consumed in any season, it is tasty and nutritious.

Ingredients are easy to find and not very expensive.

Except for the boiling time, the actual cooking time is quite short, so it can be done by people who do not have much time.

Supplies

Any food market in the world.

Step 1: Let's Talk About Ingredients

  • 4 zucchini medium dimension (total 1Kg.)

  • 1 yellow onion

  • 1 carrot

  • 1 parsley root

  • 1/2 lemon

  • 1 egg (optional)

  • 50g. butter (optional)

  • 60g.rice
  • White flour (30g.)
  • Salt(to taste)
  • 5og. sour cream(optional)
  • Dried or fresh chopped parsley(to taste)

People who want a strict vegetarian diet can give up butter, egg and sour cream.

Step 2: Peel and Cut

Peel the carrot, onion , parsley root.

Wash all the vegetables and cut into cubes as in the photo.

Step 3: We Partially Boil the Onion, the Carrot and the Parsley Root

In a medium-sized pot put: water and carrot cubes, parsley root and onion cubes (see photo).

Boil for about 15 minutes over medium heat until slightly softened.

Step 4: We Boil All the Ingredients. Ready!

Add: zucchini, rice (60g.) and salt (to taste).

Cover the pot with a lid and cook until the zucchini is soft (20..30 min. see photo). Medium fire.

After that, the fire is stopped and add by chewing continuously: juice from 1/2 lemon, 30 g. flour, 50 g. butter.

After 10 ... 15 min. add the beaten egg and a little sour cream.

People who follow a strictly vegetarian diet will give up butter, egg and sour cream.

From the given quantities, 6 portions are obtained. Sprinkle chopped green or dried parsley on each.
