Introduction: Zucchini Carpaccio
Very fast and delicious recipe for all of those that think they dont like zucchini.
I really love this recipe as it is the only way we can get my brother to eat vegetables!
You will need:
Step 1: Slice the Zucchini
Wash the zucchini and slice it to get round slices.
the thickens depend on what you like.
I like to make them 1/4 of an inch.
Step 2: Set the Plate
Set them up spread on a plate leaving enough surface of each slice exposed.
Pour olive oil in order that each reaches each one of the slices.
Squeeze the juice of one lemon.
Add salt and pepper.
Step 3: Topping
Chop fresh arugula and cover the carpaccio with it.
I used 3 leaves of arugula.
Let is sit for 20 minutes and enjoy!
