Introduction: Easy Cake Mix Cookies Recipe
I found a recipe for cake mix cookies on one of those "10 DIY Food Hacks YOU NEED RIGHT NOW" lists and it sounded to good to be true. Cookies in 20 minutes? I didn't know about that.
But it works! I made cake mix cookies at home and then again in the Instructables Test Kitchen because I was so impressed with them. They're really good - especially the chocolate ones! The texture is great - they're not as dense as normal cookies, and the middles are nice and soft.
One box of cake mix will make 24 cookies - enough to satisfy even the strongest of sweet tooths. :D
Step 1: Ingredients for Cake Mix Cookies
- 1/2 cup vegetable oil
- 2 eggs
- one 15 oz box cake mix
And that's it! Super easy.
You'll also want an oven preheated to 350 F (175 C) degrees.
For maximum convenience, I recommend using 2 baking pans so you can bake the cookies all at one time. :D
Step 2: Mixing the Cake Mix Cookie Dough
Preheat your oven to 350 F (175 C) degrees.
Empty the cake mix into a large bowl. Measure out 1/2 cup vegetable oil and crack the eggs into it - beat with a fork until nice and yellow. :)
Pour the oil/egg mix into the dry and mix it well with a spatula. It'll take a bit of stirring to come together - make sure there are no dry spots left! The dough will be fairly stiff and glossy.
Step 3: Measuring Out the Cake Mix Cookie Dough
Use a tablespoon measure and scoop the dough onto baking sheets. A normal box of cake mix will give you 24 cookies - do 12 on each baking sheet.
Step 4: Baking Cake Mix Cookies
Bake the cookies for 12-14 minutes at 350 F (175 C). They will be puffy and look like they're not done when they first come out of the oven, but will flatten and firm up as they cool. They should be nicely browned on the bottom but stay light on top.
They can dry out super fast if you keep them in the oven too long, so be sure to keep you eye on them!

Ahhh 12-14 minutes perfect, I took an idea from Laura Vitale and Sorted food where I wrapped the red velvet cake mix around a galaxy caramel and then rolled it in powdered sugar and then put them in the fridge for like an hour. Then put them in the oven for like 12-14 minutes some turned out soft while others turned out into this amazing cookie that looked like these red and white christmas cookies!!!

Nope! The cookies shouldn't stick - they've got quite a bit of oil in them. :)

hi !my grandmother first made these in the late 1960's. i use the recipe that calls for 1/3 cup vegitable oil and 2 eggs. it isnt so liquidy that way. some recipes call for 1 egg and 2/3 cup oil.. i have found you cannot ruin these cake mixes. i used only water one time and the cake was a little bit dry but it was still good. the mix has all the leavenings and sugars in it already. very handy for fancy looking deserts! i have also used butter or margerine ,1/2 cup ( 1 cube) instead of the oil and that works also. try the spice cake mix. roll into balls and dip into colored or plain sugar and bake. or roll into balls , bake and after about 2 minutes of cooling, roll them in powdered sugar. then roll them once again after a few more minutes. this is execellent when used with FRUIT flavored cake mixes also. they are FAB!!!
