Introduction: 100 Cal Gluten Free, Vegan Brownie in Minutes!

These days, it seems like everyone is going gluten free and vegan! The hardest part of following these diets is finding suitable substitutes for favorite foods, so if you've been looking for a brownie that doesn't have that dreaded mushy inside, look no further— this quick, low-cal dessert maintains a perfect, velvety consistency all throughout!

Step 1: Gather Your Ingredients and Equipment

Equipment:

- Mug or Jar

- Utensil (for stirring)

- Olive Oil or Vegan Butter (to grease the mug)

Ingredients:

- 1/4 C. Coconut Milk

- 1 Tablespoon Vegan Chocolate Chips

We recommend the Enjoy Life brand!

- 1 Tablespoon Pure Cocoa Powder

- 1/2 Teaspoon Baking Powder

- 1 Tablespoon Coconut Sugar

- 1 Tablespoon Gluten Free Flour

We recommend the Red Mill coconut baking flour!

- 1 Scoop Chocolate Protein Powder


Step 2: Grease the Mug

Grease your mug using olive oil or vegan butter to make cleaning easier later!

Step 3: Combine Dry Ingredients

Combine the following ingredients and mix well:

- cocoa powder

- baking powder

- sugar

- flour

- protein powder

- chocolate chips

Step 4: Add Milk

Stir in the milk! Be aware that it may appear chunky and difficult to stir- this is okay!

Step 5: Too Thick? No Worries

The mix may seem too thick at first— this is okay! Feel free to stir in milk 1 tablespoon at a time until it reaches your desired consistency. It took us 6 tbsp. extra to get what we were looking for!

Step 6: Microwave

Microwave your mug on high for 1 minute and 30 seconds! *This is what worked for our 900 watt microwave, but since every microwave is different, feel free to play with this number.

Step 7: Bon Appétit!

Your brownie should be perfect! You know it's done when it appears wet and spongy, but not raw. You can eat it straight from the cup, or you can pull it out and have it on a plate like we did. Enjoy!
