Introduction: Baby Yoda Cookies
If you haven't seen the Mandalorian yet, I'm sure you've still heard of Baby Yoda. Now that the Christmas cookies are gone, it was time to give these little guys a try (okay - they're not really gone. But they are getting a little stale and that gives me an excuse to make something new). The surprise here: the cookie cutter is a Christmas Angel.

For the cookies - this recipe made about 4 dozen cookies.
1 C butter
1 C white sugar
½ C sour cream
3½ C flour
1 tsp baking soda
pinch salt (omit if you used salted butter)
For the icing - I needed to make some extra so be sure to have enough on hand to double if necessary.
1 C powdered sugar
1 T milk
2 tsp light corn syrup
¼ tsp almond extract
brown, green and black food coloring

Step 1: Shape Your Cookie Cutter
The first picture shows the angel cutter I had in my set of Christmas cookie cutters. I pulled the wings apart and flattened the head until it looked a bit more like the shape of Baby Yoda's head. If you have a plastic cookie cutter, just round off the head after you cut the cookies. In other words, decapitate your angel.
Step 2: Make the Dough
Cream together the butter and sugar. Add the egg and sour cream, then add the baking soda and salt. Gradually add in the flour until the dough becomes firm. The texture will be pretty crumbly.
Step 3: Knead the Dough
Put some powdered sugar on your board and turn the dough. You're going to need to work the dough a bit. Feel free to use some of the crumbly bits in place of the powedered sugar on your board.
Step 4: Roll the Dough
I've learned the hard way that rolled cookies always stick. This dough is no different. A nifty trick I've learned is to put a sheet of parchment paper down and dust it with some powdered sugar. Sprinkle a bit on your hands and rolling pin as well. Roll the dough to ¼ inch thickness.
Step 5: Cut Out Some Baby Yoda Shapes
Preheat your oven to 350°F. Parchment paper is your friend and one of my go to's when baking. Prepare your cookie sheets with parchment paper and place your Baby Yoda cut outs 1½ inches apart. Bake for 8-10 minutes. Cookies should be just barely browned along the edges.
Step 6: Meanwhile, Prepare the Icing
Stir together powdered sugar, milk, corn syrup and almond extract. If icing seems too thick, alternate a teaspoon of milk then a teaspoon of corn syrup until icing is a good spreading consistency.
Step 7: Mix Up Your Colors
I separated the icing into ramikens and added the food dyes to make the green, brown and black. The green seemed too Kelly and so I grabbed the spoon from the brown and stirred it into the green. It added just enough to make the green more Yoda-like.
Step 8: Decorate Your Baby Yodas
Add green icing to the head, brown to the body and a strip of white as a collar. I used a butter knife to spread the icing. A friend of my daughter's insisted that it would be easier to put the icing in a bag, cut the corner, and pipe the icing onto the cookies. He was wrong. While it is putzy and slow going, use a butter knife to spread the icing. I used a toothpick to add the eyes. Allow the cookies to set for an hour or two. This icing recipe leaves the cookies very shiny and smooth.
Step 9: Store Your Cookies and Enjoy!
After the icing set, I layered the cookies in a gallon sized zip-top bag, with a sheet of waxed paper between layers. They are all set for a Mandalorian watch party. Enjoy!
