Introduction: Bittersweet Mousse Cake

I'm very happy to be a part of this beautiful community!!! This is my first recipe here. I hope you enjoy it and believe that we will have a great time exchanging recipes and ideas!

Step 1: Making the Sable Biscuit and Adding the Jam

Ingredients
4 egg yolks
160 gr butter
160 gr granulated sugar
240 gr all purpose flour
2 gr salt flower
100 gr strawberry jam

Using a standing mixer stir with the paddle attachment the sugar with the eggs. Then add the butter and salt and finally the flour. Spread the mixture on a 24cm baking pan and bake for 20 minutes at 180 ºC.

When the biscuit cools completely add the jam. The reason we add the jam is of course flavour but it also helps for the biscuit to become soft by absorbing hydration from the jam.

Step 2: Ingredients for the Bitter,strawberry and White Chocolate Mousse

Ingredients
100 gr chocolate 72% cocoa
100 gr strawberry flavored chocolate
100 gr white chocolate
15 gr gelatin powder
360 gr heavy cream
400 gr heavy cream whipped with 50 gr icing sugar

Step 3: Bitter Mousse

We add 2 tbls of water to 5 gr of gelatin.
On a bain marie melt the bitter chocolate with 120 gr of the heavy cream and add the gelatin. Stir well until everything is combined. Pour the mixture into 150 gr of whipped cream and fold gently.
Pour over the base and let it set in the fridge.

Step 4: Strawberry Mousse

We add 2 tbls of water to 5 gr of gelatin.

On a bain marie melt the strawberry flavored chocolate with 120 gr of the heavy cream and add the gelatin. Stir well until everything is combined. Pour the mixture into 150 gr of whipped cream and fold gently. Pour over the bitter mousse and let it set in the fridge.

Step 5: White Chocolate Mousse

We add 2 tbls of water to 5 gr of gelatin.

On a bain marie melt the white chocolate with 120 gr of the heavy cream and add the gelatin. Stir well until everything is combined. Pour the mixture into 150 gr of whipped cream and fold gently. Pour over the strawberry mousse and let it set in the fridge.

Step 6: Glaze

Ingredients
275 gr heavy cream
225 gr chocolate 72% cocoa
20 gr strawberry flavored chocolate

When the cake is set remove the baking hoop.
On a bain marie melt the dark chocolate with the heavy cream. Pour the glaze over the cake and make lines on the surface with melted strawberry flavored chocolate

Step 7: Garnishes

Ingredients
20 gr. melted dark chocolate

20 gr. melted white chocolate

100 gr.dried strawberries

On a parchement paper rolled over a rolling pin make lines with the melted dark and white chocolate and let it harden in the fridge, when it is cooled take the garnish off of the parchement paper, add small pieces of strawberry and place on the cake. Finish the decoration with strawberries all around the cake.
