Introduction: Butterfly Chicken With Cheddar Gratin
When you have chicken breast and cheese, there's nothing better than making the butterfly chicken with cheddar gratin.
Materials:
- Chicken breast
- Cheddar cheese
- Parmesan cheese
- basil leaves
- garlic
- onion/shallot
- thymes, black pepper and oregano
- vegetable oil and butter
Step 1: Cutting and Seasoning
- Preheat oven to 375F
- Separate the fillet and then slice chicken breast 80% of the way through into butterfly shape
- Rub in thyme, black pepper, and oregano
- add a bit of salt
- finely dice shallot
- crush 2 cloves of garlic
Step 2: Preparing the Gratin
- Grate cheddar and parmsesan together
- mix in basil leave flakes
Step 3: Cooking the Chicken
In a hot pan:
- add 2 tbsp of oil
- saute the garlic until brown, then remove from pan
- add in the chicken meat and lightly brown on both sides, then remove from pan
Step 4: Saute the Shallot
In the same pan:
- melt 2 tbsp of butter
- saute the shallot well
- remove the shallot from pan
- scrape away debris in the pan
Step 5: Roasting
- Scoop shallot over chicken meat
- add generous amounts of gratin mix on top
- place into the oven for 5 minutes
Step 6: Serve and Enjoy
- Carefully remove chicken from pan and transfer to a plate
- dash in some fresh basil leave flakes and serve
