Caramel Chocolate Chunk Cookies
{recipe from Not Without Salt}

Makes 32 large cookies

1/2 cup {1 stick} butter
1 1/2 cup brown sugar {I mixed with about 4 Tablespoons washed sugar since I ran out}
2 eggs
1 teaspoon vanilla
1/2 teaspoon sea salt {or kosher salt}
2 cups flour
2 teaspoons baking soda
6 oz. dark chocolate, chopped {I used Van Houten Semi-sweet Dark Chocolate}

In a small saucepan, add the butter and brown sugar. Bring to a boil and simmer on medium-low then reduce to low heat mixing continuously and scraping the bottom until sugar is dissolved. Watch carefully so you don't scorch the sugar. Remove from heat and let this mixture cool in a large mixing bowl for 20 minutes OR what I did - put in the fridge for 10 minutes.

Once cooled, add in eggs and vanilla and mix by hand until well-combined. Stir in salt, baking soda and flour. With a few streaks of flour renaming, add in chopped dark chocolate. My mixture is still warm so the chocolate melted but not totally, that's okay and that's better. Let cool in the fridge for 30 minutes.

Pre-heat your gas oven to 300' and grease cookie sheets. Set aside.

Using two spoon, scoop batter into cookie sheets and bake for at least 10 minutes in gas oven until golden brown around the rim. Remove from oven and let cool in the pan for five minutes. Transfer on a cooling rack and let cool completely.
