Introduction: Chewy Cranberry & Orange Chocolate Chunk Cookies

Step 1: Cookie Dough

85g / 6tbsp Unsalted Butter

200g / 1 Cup Light Brown Sugar

112g / 1/2 Cup Caster Sugar

1 Egg + 1 Egg Yolk

1tsp Vanilla Extract

3-4tbsp Orange Juice

250g / 2 Cup All Purpose Flour

1/2tsp Salt

1/2tsp Baking Soda

Beat the butter and sugar together, this can be done by hand or by using an electric mixer. Add in the eggs and stir well. Juice one orange and add 3tbsp of the orange juice to the mixture along with the vanilla extract. In a separate bowl, mix together the flour, salt and baking soda with a whisk. Next, add the dry ingredients to the wet ingredients and mix until a dough is formed.

Step 2: Add the Chocolate & Chill

Milk Chocolate Chunks

White Chocolate Chunks

Dired Cranberries

Add in your desired amount of milk and white chocolate chunks along with some dried cranberries. Mix together and leave to chill in the fridge for one to two hours.

Step 3: Bake

One the dough has chilled in the fridge, use an ice scream scoop to create even sized cookie dough balls and place onto a baking tray lined with paper. Bake at 165 degrees celsius for 12 minutes. After removing the cookies from the oven, leave the cookies to sit in the tray for 10 minutes before transferring to a wired rack.
